4 tablespoons cocoa or 1 1/2 squares baking chocolate
3/4 cups sugar
5 tablespoons all-purpose flour
1/4 teaspoon salt
2 egg yolks, lightly beaten
1 1/2 cups whole milk
1/2 teaspoon vanilla
1 tablespoon of butter
1 unbaked 9-inch piecrust
2 egg whites
1/8 teaspoon kosher salt
4 tablespoons sugar

Steps:

  • Preheat the oven to 350° F.
  • In a saucepot, whisk together the cocoa, sugar, flour, salt, egg yolks, and milk.
  • On medium heat, cook while stirring until it bubbles and thickens, about 5 to 10 minutes. If it becomes lumpy, just beat out the lumps. (It will not get any thicker in the oven so cook until it’s as thick as you want it.)
  • Remove the chocolate filling from the heat and stir in the vanilla and butter.
  • Meanwhile, as you make the custard, poke holes in the piecrust with a fork and bake it until it’s brown, about 20 minutes.
  • To make the meringue, beat the egg whites with salt and when they start to get fluffy add the sugar.
  • Pour the chocolate custard into the baked pie shell and top with the beaten egg whites. Bake it until it the peaks on the meringue are lightly browned, about 10 minutes. Serve warm.
  • Grandma says: “It’s real good hot, wonderful cold and you can even eat it frozen—then it’s like a popsicle!”

With its cloak of pure chocolate, this buttery cookie is sublime. For the best flavor, use a high-quality pure vanilla extract and the best chocolate you can find — preferably Valrhona. Melting the chocolate in two stages helps keep it at an even temperature — insuring that it will set evenly.

Yield Makes about 3 dozen cookies

2 sticks (1/2 pound) unsalted butter, at room temperature
2/3 cup sugar
2 teaspoons vanilla extract
1/2 teaspoon salt
2 1/4 cups all-purpose flour
8 ounces high-quality semisweet chocolate, finely chopped

Steps:

  • Arrange racks in upper and lower thirds of oven and preheat to 325°F. Line 2 large cookie sheets with parchment paper.
  • In electric mixer, beat butter, sugar, vanilla, and salt at medium speed just until smooth. Add flour and mix at low speed until combined. Divide dough in half and shape into 2 disks.
  • On lightly floured work surface, roll out 1 piece dough to 1/4-inch-thick rectangle. Using fluted pastry wheel or large knife, cut into 2- by 1-inch rectangles. Transfer cookies to baking sheets, spacing 1 1/2 inches apart. Repeat with remaining dough.
  • Prick each cookie several times with tines of fork, then chill 10 minutes. Bake until edges are golden, about 15 minutes. Cool on pans 5 minutes, then transfer to racks and cool completely.
  • To decorate: Line baking sheet with clean parchment or wax paper. In medium heatproof bowl set over saucepan of simmering water, melt half chocolate. Add remaining chocolate, remove bowl from heat, and stir occasionally until smooth. Pour into small bowl.
  • Dip each cookie halfway into chocolate, let excess drip off, and place on baking sheet. Let stand until chocolate is set, about 1 hour. Store in airtight container at room temperature. (Do not refrigerate.)

  • Preheat the oven to 200ºC / gas mark 6. Lightly grease a 33 × 23 centimetre Swiss roll tin, and line with non-stick paper or baking parchment, pushing it into the corners. For the sponge, whisk the eggs and sugar using an electric hand whisk in a large bowl until the mixture is pale in colour, light and frothy. Sift the flour and cocoa powder into the bowl and carefully cut and fold together, using a metal spoon, until all the cocoa and flour are incorporated into the egg mixture. (Be careful not to beat any of the air out of the mixture.) Pour into the lined tin and spread evenly out into the corners. Bake in the middle of the preheated oven for eight to 10 minutes until pale golden and the sides are shrinking away from the edge of the tin. Place a piece of baking parchment bigger than the Swiss roll on the work surface. Invert the cake on to the paper and remove the bottom lining piece of paper. Trim the edges of the cake with a sharp knife and make a score mark 2.5 centimetre in along the longer edge. Roll up (from the longer edge) using the paper, rolling with the paper inside. Set aside to cool. While the cake is cooling, make the icing.  Melt the chocolate and 300ml of the cream in a bowl over a pan of simmering water until completely melted (be careful not to overheat; the bowl must not touch the water). Put into the fridge to cool and firm up (this icing needs to be very thick for piping). Whip the remaining cream. Uncurl the cold Swiss roll and remove the paper. Spread a third of the icing over the surface, then spread the whipped cream on top, and re-roll tightly. Cut a quarter of the cake off from one end on the diagonal. Transfer the large piece of cake to a serving plate and angle the cut end to the side of the large cake to make a branch. Cover the surface of the cake with the melted apricot jam. Put the remaining chocolate icing into a piping bag fitted with a star nozzle. Pipe long thick lines along the cake, covering the cake completely so it looks like the bark of a tree. Cover each end with icing or, if you wish to see the cream, leave uniced.
