Picture your favorite diner or coffee shop. Now, picture a cheeseburger deluxe, loaded with all the fixin’s, being placed right in front of you. And finally, picture that burger being deconstructed into a pasta. What you’re about to experience is pure magic; you won’t even be upset you missed out on the classic diner accompaniment of a milkshake (which I’ve yet to learn how to pressure cook).

Yield 4-6 servings

Number Of Ingredients 21

3 tbsp extra-virgin olive oil
1 large red onion (diced, divided, plus more for serving)
1 1/2 lbs ground beef (the less lean, the better)
3 cloves garlic (minced or pressed)
1 tbsp Worcestershire sauce
3 cups beef broth
1 can crushed tomatoes ((28 oz))
1 can tomato sauce ((8 oz))
1/2 - 1 tbsp hot sauce (optional)
1 tsp liquid smoke (optional)
2 tsp Italian seasoning
1 1/2 tsp seasoned salt
1 tsp black pepper
1 lb large elbow macaroni
1/2 cup thousand Island dressing
1/4 cup diced dill pickles (plus more for serving, optional)
2 tbsp sweet relish (optional)
2 tbsp barbecue sauce
1 tbsp yellow mustard (optional)
1 lb shredded Cheddar cheese
fried onions (for serving)

Steps:

  • Add the olive oil to the Instant Pot, hit Sauté, and Adjust so it’s on the More or High setting. After 3 minutes of the oil heating, add half the onion and sauté for 3 minutes, until lightly softened.
  • Add the ground beef and garlic and, using a mixing spoon or spatula, break up the meat until it begins to crumble and lightly brown, about 3 minutes. It shouldn’t be fully cooked at this point (that’s what the pressure cooking is for). Do not drain any juices released—we want them in there for more flavor!
  • Add the Worcestershire sauce and deglaze (scrape the bottom of the pot to free it of any browned bits).
  • Add the broth, crushed tomatoes, tomato sauce, hot sauce (if using), liquid smoke (if using), Italian seasoning, seasoned salt, and black pepper. Stir everything together well.
  • Add the pasta but do not stir. (Why? Well, there’s lots of meat in there. If you stir the pasta in, you run the risk of clogging the pot when it tries to come to pressure.) Just smooth the pasta out so it’s slightly submerged in the sauce.
  • Secure the lid and move the valve to the sealing position. Hit Cancel and then hit Manual or Pressure Cook for 6 minutes on High Pressure. Quick release when done.
  • Add the remaining red onion, the Thousand Island dressing, pickles (if using), relish (if using), barbecue sauce, mustard (if using), and Cheddar cheese. Stir until the cheese is melded into the pasta. Serve topped with additional red onion, dill pickles, and fried onions, if desired.

2 medium red onions peeled and sliced

1.5 kg higher-welfare loin of pork boned, skinned, rolled and tied
sea salt
freshly ground black pepper
1 small bunch fresh thyme leaves picked
2 knobs butter
6 figs quartered
2 wineglasses Marsala
275 ml organic chicken stock
3 heaped tablespoons crème fraîche optional

Steps:

    1. This method of cooking pork stops it drying out and keeps it juicy and soft. You also end up with a wonderful rich sticky sauce!
    2. Preheat your oven to 200ºC/400ºF/gas 6. Heat an appropriately sized casserole-type pan, add a lug of olive oil and sweat the onions and garlic gently until soft. Roll the pork in the seasoning and thyme leaves. Push the onions to one side of the pan, add a knob of butter and brown the pork lightly all over.
    3. Stir the quartered figs into the onions, pour one glass of Marsala over the meat and drop in the rest of the butter. Tear a piece of greaseproof paper big enough to cover the pork comfortably, scrunch it up with your hands and run it under the cold tap. Unravel it and tuck it in the pot over the pork, figs and onions. This will help the pork steam as well as roast and keep it really moist and juicy.
    4. Place in the hot oven. After 20 minutes, lift off the paper, turn the pork in the juices and add the other glass of Marsala. Replace the paper and cook for 30 to 40 minutes more. Check the pork is cooked, remove to a plate and allow it to rest for 15 minutes before slicing.
    5. While the meat is resting, finish the sauce by skimming any fat off the top, adding the chicken stock and simmering for 10 minutes. Check the seasoning and add the crème fraîche if using. Slice the pork as thinly as you want and serve with the delicious sauce.

    1. Preheat the oven to 220°C/425°F/gas 7.
    2. Place a 30cm non-stick ovenproof frying pan on a high heat, with a smaller non-stick pan on a medium heat alongside. Pour 1 tablespoon of olive oil into the larger pan.
    3. Peel and roughly chop the onions, adding them to the larger pan as you go.
    4. Roughly chop two- thirds of the thighs, finely chop the rest, and add to the onion pan. Cook for 6 minutes, or until golden, stirring occasionally.
    5. Meanwhile, place the mushrooms in the dry pan, tearing up any larger ones. Let them toast and get nutty for 4 minutes, then tip into the chicken pan and strip in half the thyme leaves.
    6. Remove the pan from the heat, add a pinch of sea salt and black pepper, then stir in 1 tablespoon of red wine vinegar and 150ml of water.
    7. Working quickly, roll out the pastry so it’s 2cm bigger than the pan, then place it over the filling, using a wooden spoon to push it into the edges.
    8. Very lightly criss-cross the pastry, then brush with 1 teaspoon of olive oil. Poke the remaining thyme sprigs into the middle of the pie.
    9. Bake at the bottom of the oven for 15 minutes, or until golden and puffed up. Easy!
