My reverse-engineered recipe for Subway's Sweet Onion Sauce, as requested by another Food.com member. It's quite sweet, but very tasty, if you've never tried it before.

Number Of Ingredients 16

1 cup granulated sugar (plus 2 tablespoons)
1/2 cup plus 1 tablespoon cold water
6 tablespoons white vinegar
1 1/2 tablespoons red wine vinegar
1 tablespoon arrowroot
1 tablespoon minced onion flakes
2 1/2 teaspoons Dijon mustard
2 1/2 teaspoons mustard powder
3/4 teaspoon celery salt
3/4 teaspoon fresh onion juice (use a garlic press)
3/4 teaspoon poppy seed
1/2 teaspoon onion salt
1/4 teaspoon garlic salt (plus 1/8 teaspoon)
1/4 teaspoon paprika (plus 1/8 teaspoon)
1/4 teaspoon black pepper (plus 1/8 teaspoon)
1 -2 drop sesame oil

Steps:

  • WHISK sauce ingredients together in a small saucepan (1 cup plus 2 tablespoons granulated sugar, 1/2 cup plus 1 tablespoon cold water, 6 tablespoons white vinegar, 1 1/2 tablespoons red wine vinegar, 1 tablespoon arrowroot powder, 1 tablespoon minced onion flakes, 2 1/2 teaspoons Dijon mustard, 2 1/2 teaspoons mustard powder, 3/4 teaspoon celery salt, 3/4 teaspoon fresh onion juice, 3/4 teaspoon poppy seeds, 1/2 teaspoon onion salt, 3/8 teaspoon garlic salt, 3/8 teaspoon paprika, 3/8 teaspoon black pepper, 1-2 drops sesame oil).
  • BRING mixture to a boiling while whisking constantly.
  • REDUCE heat to low simmer, stirring until thickened and flavorful, about 5 minutes.
  • ALLOW to cool, then refrigerate in a sealed container (keeps indefinitely).
  • SERVE as a dressing for sandwiches or salads and enjoy!

Bits of cauliflower and cucumber infused with the tart flavours of mustard and vinegar. Stick these pickles in a sandwich or wrap for a bright contrast to creamy fillings.

1/2 cup (140g) coarse cooking salt
2 cup (500ml) boiling water
1 litre (4 cups) cold water
500 gram cauliflower, chopped coarsely
4 medium brown onions (600g), chopped coarsely
2 lebanese cucumbers (260g), unpeeled, chopped coarsely
3 cup (750ml) cider vinegar
2 cup (440g) white sugar
1 tablespoon mustard powder
1 teaspoon curry powder
1 teaspoon turmeric
1/3 cup (50g) cornflour
2 tablespoon water

Steps:

  • Combine salt and the boiling water in large non-metallic bowl; stir until salt dissolves. Add the cold water. Add vegetables; mix well. Cover with a large plate or a sealed plastic bag half-filled with water to keep vegetables submerged; stand overnight.
  • Rinse and drain vegetables well; drain on absorbent paper.
  • Combine vegetables, vinegar, sugar and spices in large saucepan; stir over high heat, without boiling, until sugar dissolves. Bring to the boil. Reduce heat; simmer, uncovered, about 10 minutes or until vegetables are tender.
  • Blend cornflour with the water in small jug until smooth, add to pan; cook, stirring, until mixture boils and thickens.
  • Spoon hot pickle into hot sterilised jars; seal immediately. Label and date jars when cold.
  • Store pickles in a cool, dark place for at least three weeks before opening.
