2 pounds ground beef
6 cups water
1 can (28 ounces) tomato sauce
1 can (28 ounces) diced tomatoes, undrained
2 cups chopped green peppers
1/4 cup packed brown sugar
2 teaspoons salt
2 teaspoons beef bouillon granules
1 teaspoon pepper
2 cups cooked long grain rice
Chopped fresh parsley, optional

Steps:

In a Dutch oven over medium heat, cook and stir beef until no longer pink, breaking it into crumbles; drain. Stir in next 8 ingredients; bring to a boil. Reduce heat; simmer, uncovered, until peppers are tender, about 30 minutes. , Add cooked rice; simmer, uncovered, 10 minutes longer. If desired, sprinkle with chopped fresh parsley.

Ingredients

4 skinless boneless chicken breasts
Kosher salt
Freshly cracked black pepper
6 oz. cream cheese, softened
1/2 c. shredded mozzarella
1/2 c. shredded cheddar
2 cloves garlic, minced
4 slices bacon, cut into 2" strips
3 jalapeños, thinly sliced

Steps:

Preheat oven to 400º. Make 5 slits in each breast, being careful not to cut through completely. Transfer to a small baking sheet and season all over with salt and pepper. In a medium bowl, stir together cream cheese, mozzarella, cheddar, and garlic. Season with salt and pepper. Stuff each chicken breast with bacon, sliced jalapeños, and cream cheese mixture. Bake until bacon is crisp and chicken is cooked through and no longer pink, about 25 minutes.
