Squab is just a fancy name for a young domestic pigeon, and I decided to accompany it with chanterelles, carrot puree, and squash. Now these aren't the pigeons you see on top of buildings looking for any little scrap of food they can find. This is a fantastic recipe as we head into the fall and winter months, perfect for game bird cooking! Squab is a young bird that is normally around the 4 week old in maturity. They are tender, and full of delicate flavor. Here I used the bird in a few different ways. The breast meat you normally try to cook to a medium rare (just like a duck breast). The legs and wings I confit and then crisped the skin. Jp is a big fan of squab, so this recipe definitely, was right up his alley. Here is the recipe and I hope you enjoy

- Preheat oven to 350 degrees Fahrenheit. Wash the entire bird, ensuring the inner cavity is well cleaned. Pat dry. Over medium heat, heat oil in a heavy pan. Season the squab with salt and pepper. Place the squab breast-side down into the oil, turning to sear on all sides. Place the squab, breast side up, into a roasting pan and roast for about 10-12 minutes. Halfway through, baste the bird. Allow the squab to rest for 5 minutes before serving.

- In a large skillet, saute celery and onion in butter until tender. Add the rice, mushrooms, raisins, 3 tablespoons orange juice concentrate, parsley, 3/4 teaspoon salt and marjoram. Sprinkle cavities of squab lightly with remaining salt; stuff with rice mixture. , Place on a rack in a roasting pan. Combine oil and remaining orange juice concentrate; drizzle over squab. Bake, uncovered, at 375° for 1 hour or until meat juices run clear and a thermometer inserted into the stuffing reads 165°, basting frequently.

Increase the heat to high, and then pour in the port and red wine and cook until reduced by three-quarters, scraping up any brown bits on the bottom of the pan. Add the stock and cook until reduced by half, then stir in the creme fraiche. Strain the sauce into a bowl, and then heat gently in a small saucepan over medium heat. Once bubbling, remove from the heat and add the parsley, thyme and piquillo peppers. Taste and season with salt and freshly ground pepper.

In a hot saute pan add 2 tablespoons olive oil when oil begins to ripple place squab, skin side down or 6 to 8 minutes or until skin is a nice even golden brown.
