Ice Cream Snowballs Recipe: How to Make It image

The House of Loreto residents agree there's no better way to enjoy this festive ice cream dessert than in the warm atmosphere of dinner with friends and family. For extra fun, we sometimes top each snowball with a lit red candle.

1/2 gallon vanilla ice cream, softened
3-1/2 cups sweetened shredded coconut (about 10 ounces)
Fresh mint, optional

Steps:

  • Scoop ice cream into 12 balls. Place on a baking sheet and freeze until solid. Roll in coconut. Garnish with mint if desired.

What a delicious treat these snowballs are. Different than anything we've ever made. The Nilla Wafers become softened while in the fridge but they're not soggy. Sweet and tart pineapple filling pairs well with the flaky sweet coconut. These snowballs are a nice, light, festive, and fluffy treat that everyone will love. They're so adorable too!

1/4 cup(s) softened butter
2 teaspoon(s) vanilla extract
1 1/4 cup(s) sugar
2 can(s) crushed pineapple, 20 oz each
1 cup(s) walnuts
2 box(es) vanilla wafers
2 box(es) Dream Whip
2 bag(s) coconut

Steps:

  • Create the filling: Mix 1/4 cup of softened butter, 1 tsp of vanilla extract, 1 cup of sugar, walnuts, and crushed pineapple (well-drained).
  • Stack each snowball 4 wafers-high putting filling in between.
  • Mix the frosting: Prepare 2 boxes of Dream Whip according to directions on the box and add in 1/4 cup sugar and 1 tsp vanilla extract. You may need less frosting given that vanilla wafers are made so small these days (they were a lot bigger when I first made this recipe 55 yrs. ago!).
  • Spread the frosting generously over each snowball. Roll them in coconut. Crown with a cherry on top. Refrigerate for 24 hrs. Then, they can be frozen.
