Buttery, nutty, and a touch of caramel, this is a very yummy pie! Full of flavor! Serve hot or cold, with a good size dollop of whipped topping or vanilla ice cream.

Ingredients

1 (9 inch) unbaked pie crust
36 individually wrapped caramels, unwrapped
¼ cup butter
¼ cup milk
¾ cup white sugar
3 eggs
½ teaspoon vanilla extract
¼ teaspoon salt
1 cup pecan halves

Steps:

Preheat oven to 350 degrees F (175 degrees C.) In a saucepan over low heat, combine caramels, butter and milk. Cook, stirring frequently, until smooth. Remove from heat and set aside.
In a large bowl, combine sugar, eggs, vanilla and salt. Gradually mix in the melted caramel mixture. Stir in pecans. Pour filling into unbaked pie crust.
Bake in the preheated oven for 45 to 50 minutes, or until pastry is golden brown. Allow to cool until filling is firm.

Ooey gooey Caramel Pecan Poke Cake starts with a packaged cake mix, but still has that old fashioned from-scratch taste that everyone craves.

Ingredients

1 (18.25-ounce) box chocolate cake mix, prepared according to package directions
1 (14-ounce) can sweetened condensed milk
1 (14-ounce) can caramel topping
1 (16-ounce) container coconut pecan frosting
1/2 cup chopped pecans

Steps:

Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. Pour batter into baking dish.
Bake 28 to 30 minutes or until toothpick inserted in center comes out clean. Let cool 5 minutes, then poke holes in top of cake using a wooden spoon handle.
In a medium bowl, mix sweetened condensed milk and caramel topping. Pour mixture slowly over cake while still warm.
Cover and refrigerate 8 hours or overnight. Spread frosting over cake, sprinkle with pecans, and serve.
