Leave it to the Pioneer Woman to come up with a recipe that officially counts as a serving of vegetables while also appealing to a major love for cheese.

1 pound frozen broccoli florets
5 cups low-sodium chicken broth
1 medium onion, diced
2 medium carrots, finely diced
2 (10.5-ounce) cans cream of celery soup
1/4 teaspoon seasoned salt
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
1 1/2 pounds processed melting cheese, such as Velveeta
2 cups shredded sharp Cheddar cheese (8 ounces), plus more for serving
Crumbled saltine crackers, for serving

Steps:

  • Place the broccoli, chicken broth, onions, carrots, cream of celery soup, seasoned salt, kosher salt, black pepper, and cayenne in a slow cooker and stir to combine. Cover and cook on the HIGH setting for 4 hours. The veggies will be soft and the flavors will be marvelous!
  • Use an immersion blender or potato masher to purée the soup about three-quarters of the way smooth in order to leave some chunks for delicious texture. (Alternatively, use a regular blender. Just be sure to blend only 1 cup at a time and use extreme caution. Then return it to the slow cooker.)
  • Add the processed cheese and cheddar and to combine. Cover, turn the heat to the LOW setting, and cook for 15 minutes. Utterly creamy and delicious!
  • Here's where you want to taste the soup and add more of what you'd like: a little more salt, a little more cayenne, and so on. Serve it warm with a sprinkling of Cheddar and some crumbled saltines.

12 boneless, skinless chicken thighs, cut into chunks
Kosher salt and freshly ground black pepper
1 teaspoon five-spice powder 
2 cups low-sodium chicken stock 
1/2 cup low-sodium soy sauce 
2 tablespoons chopped fresh ginger
1 tablespoon sriracha 
4 cloves garlic, chopped 
2 teaspoons cornstarch 
1 teaspoon toasted sesame oil 
2 cups broccoli florets 
1 red bell pepper, coarsely chopped 
Cooked rice, for serving
4 scallions, sliced, for garnish 
Sesame seeds, for garnish

Steps:

  • Season the chicken chunks lightly with salt and pepper and put them in a slow cooker. Sprinkle over the five-spice powder. Stir together the stock, soy sauce, ginger, sriracha and garlic in a small bowl and pour over the chicken. Cover and cook on high for 3 1/2 hours.
  • After 3 1/2 hours, mix together the cornstarch with 2 tablespoons water in a small bowl. Stir it into the slow cooker along with the sesame oil. Add the broccoli and peppers, cover and continue cooking on high for 30 minutes. Taste the sauce and adjust the seasoning.
  • Serve over rice garnished with scallions and sesame seeds.

  • In a small skillet, heat butter over medium-high heat. Add onion; cook and stir 3-4 minutes or until tender. Transfer to a 3- or 4-qt. slow cooker. Add broccoli, broth, milk and pepper., Cook, covered, on low 3-4 hours or until broccoli is tender. Stir in Velveeta until melted. Add next 2 ingredients; stir until melted. Just before serving, stir soup to combine. Top servings with additional cheddar cheese.
