This is my favourite potato recipe of all time. It makes the perfect accompaniment to a roast or any other meat dish. Traditional recipes for this take 1 1/2 - 2 hours to cook, so I start mine off in the microwave. Some recipes are very rich, calling for all cream plus butter and cheese on the top. I've found this version - even when made with low fat ingredients - tastes wonderfully creamy but not too rich with no compromise on flavour. One of the best things about Potatoes Dauphinoise is that if there's any left over it keeps well in the fridge for several days and it reheats beautifully in the microwave (unlike roast potatoes which can taste a bit floury when reheated). I've also frozen it, defrosted it in the fridge during the day, then reheated it in the oven for dinner. Try it - I know you'll love it!

4 medium potatoes
1 tablespoon butter or 1 tablespoon margarine
2 -3 cloves garlic, crushed and chopped finely
salt
fresh ground black pepper
grated nutmeg
1 cup cream (low fat is fine)
1 cup milk (no fat or low fat is fine)
1 cup grated tasty cheese (low fat is fine)

Steps:

  • Variation: This recipe also works well with orange sweet potato (kumera).
  • If using sweet potato, try substituting the nutmeg with a generous sprinkling of caraway seeds over each layer.
  • Yum!
  • Grease a 6 cup capacity ovenproof dish generously with the butter or margarine then smear the garlic around the bottom and sides of the dish.
  • (I use a round glass pyrex dish.) Peel potatoes and slice thinly into rounds.
  • (I use the slicing blade of my food processor).
  • Line the bottom of the dish with a single layer of overlapping potato slices.
  • Sprinkle generously with salt, pepper and nutmeg.
  • Repeat this layering and sprinkling process until you have used all of the potato slices.
  • In a large jug, combine cream and milk and stir well.
  • Pour this mixture over the potato slices, gently easing the potato away from the sides of the dish to allow the liquid to penetrate evenly.
  • Place the dish onto a microwave safe plate and cook, uncovered, in a microwave on MEDIUM HIGH for 15- 20 minutes.
  • Check occasionally.
  • If the liquid in the potatoes boils over, simply pour it from the plate back into the dish and continue cooking.
  • Microwave just until you can push the blade of a sharp knife through the potato layers without feeling any crunchy resistance.
  • Having reached this stage you can go on to cook the dish in the oven or cover with plastic wrap and keep in the refrigerator for several hours or more before cooking.
  • Pre-set your oven to 180°C (350°F).
  • Sprinkle the top of the potatoes with the grated cheese and place the dish on an upper shelf in the oven for 20 minutes or until the top turns golden brown.
  • (This may take slightly longer if taking the dish straight from the refrigerator.) To serve, cut into wedges and remove each wedge carefully with a spatula.

Cheesy potatoes recipe with crispy edges, tender middles, and just a whisper of heat—need we say more?

Room-temperature unsalted butter (for foil)
3 oz. sharp white cheddar (not aged)
3 oz. Gruyère
3 lb. russet potatoes (about 6 medium)
½ large yellow onion
1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt
½ tsp. cayenne pepper
Freshly ground black pepper
1¼ cups heavy cream

Steps:

  • Butter one side of a large (12x12") square of foil with room-temperature unsalted butter. Line a large rimmed baking sheet with another sheet of foil. Place a rack in upper third of oven; preheat to 400°.
  • Grate 3 oz. sharp white cheddar (not aged) and 3 oz. Gruyère on the large holes of a box grater (you should have 1 cup packed of each). Place in a medium bowl, gently toss to combine, and set aside.
  • Scrub 3 lb. russet potatoes (about 6 medium), then peel. Using a sharp chef’s knife (or a mandoline if you have one), slice potatoes crosswise into ¼"-thick rounds, transferring to a large bowl as you go. Very thinly slice ½ large yellow onion crosswise into half-moons, then add to bowl with potatoes.
  • Add 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt and ½ tsp. cayenne pepper and season with freshly ground black pepper; toss to combine and coat potatoes and onions with seasonings.
  • Place pie dish in front of you and imagine that it is the face of a clock. Arrange potato slices in a row in dish, overlapping by about two thirds, to extend in a straight line from ten o’clock to two o’clock (don’t worry about the onions; some will stick to potatoes and come along for the ride, and some won’t). It’s okay if the potato slices are lying flat at this point. Repeat with another row beneath the first one, arranging so second row overlaps halfway over first row.
  • Using your hands, push both rows of potatoes gently toward the top edge (twelve o’clock) of the dish until they slide up the sides toward the rim, and are eventually perched on their outer edges at a steep diagonal and fit snugly into the pan.
  • At this point, the potatoes should stay in place, and you can shingle more potatoes into the dish, row by row and overlapping as before, periodically pushing potatoes snugly together, until the dish is full. Tuck remaining slices of potato and onion in bowl into any available slots (you may have a few pieces of potato that don’t make it into the dish). Discard liquid left in bowl.
  • Place pie dish onto prepared baking sheet (for catching any drips), then gradually pour 1¼ cups heavy cream over potatoes. Top with half of cheese mixture. Cover dish with prepared foil, buttered side down, and crimp very tightly to close.
  • Bake gratin until potatoes are tender when pierced with a paring knife or skewer (uncover to check), 60–75 minutes. It’s okay if some cream has overflowed and browned—that’s what the foil lining is for.
  • Remove gratin from oven and heat broiler. Carefully remove foil, directing the steam away from your face (it will be hot under there), then top gratin with remaining cheese mixture.
  • Broil until cheese is bubbly and browned, about 4 minutes. Let gratin sit at least 10 minutes before serving.

  • GET AHEAD 1. To make the sauce, peel and finely slice the garlic and put it into a pan on a medium heat with the butter. 2. Snap off and wash the cauliflower leaves, discarding any tatty ones, then cut the centre into florets, slicing up the stalk. 6. Arrange it all in an appropriately sized baking dish, letting any leaves hang beautifully over the edge. 7. Pour over the broccoli sauce and grate over the remaining Cheddar. 8. In a food processor, blitz the bread and thyme leaves into rough crumbs with 1 tablespoon of oil and a pinch of sea salt and black pepper, then pulse in the almonds so they retain a nice bit of texture. Scatter the topping evenly over the cauliflower cheese. Cover and pop in the fridge. ON THE DAY 1. Preheat the oven to 180°C/350°F/gas 4. 2. Bake for 50 minutes to 1 hour, or until golden and cooked through, then enjoy!
