2 zucchini
3 carrots
1 chopped garlic clove
1 bunch mint
2 tablespoons sunflower oil
2 tablespoons olive oil
3 tablespoons white balsamic vinegar
lemon juice
1 tablespoon Caper
salt
freshly ground peppers

Steps:

  • Wash and trim the zucchini and slice thinly at an angle.
  • Peel and thinly slice the carrots, also at an angle, using a mandolin vegetable slicer if available.
  • Heat the sunflower oil and sauté the carrots and zucchini until golden brown. Add the garlic at the end and drain on kitchen paper.
  • Put the vegetables into a bowl with the olive oil, balsamic vinegar and capers and mix. Chop the mint (reserving a few leaves to garnish) and add to the vegetables.
  • Season with salt and pepper, add lemon juice to taste and leave to marinate for at least 3 hours. Check the seasoning before serving.

½ cup julienned green bell pepper
½ cup julienned red bell pepper
½ cup diced eggplant

1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon minced onion
½ teaspoon cayenne pepper
½ teaspoon ground black pepper
½ teaspoon salt

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Combine broccoli, cauliflower, bell peppers, eggplant, olive oil, garlic powder, paprika, onion, cayenne, black pepper, and salt in a bowl.
  • Roast in the preheated oven until tender, about 10 minutes.
