My mom made this and I thought that she was nuts to mix shrimp & cream cheese. Boy was I wrong! My husband told me that this was one of the best things that I've ever made. For a twist on this recipe, you can add 1 lb crabmeat.

1 stick(s) butter
1-8oz package(s) cream cheese
3 tablespoon(s) butter
1 - large onion, chopped
1 - small bell pepper, chopped
3 - ribs celery, chopped
1/2 pound(s) fresh mushrooms, sliced
1-1/2 pound(s) shrimp, peeled & deveined
1 can(s) cream of mushroom soup
1 tablespoon(s) finely chopped garlic
- tabasco, to taste
1 teaspoon(s) white pepper
1 cup(s) cooked rice
8 ounce(s) sharp cheddar cheese, grated
- cracker crumbs

Steps:

  • Melt butter in 2 quart saucepan; add cream cheese and stir until cheese is melted. *I usually whisk the melted cream cheese and butter together once the cream cheese is melted.
  • In heavy Dutch oven, saute onion, bell pepper and celery in 3T butter.
  • Add sliced mushrooms and shrimp and simmer about 5 minutes, stirring constantly.
  • Add the melted cream cheese and butter mixture.
  • Blend in soup, seasonings and rice.
  • Spray a large casserole dish with vegetable spray. Then carefully place mixture in the casserole dish.
  • Toss Cheddar cheese and cracker crumbs together and sprinkle over top. Bake at 350 for 30 min, until bubbly and golden brown.

8 ounces (3 cups) uncooked dried farfalle (bow tie) pasta
1 (10-ounce) container refrigerated Alfredo sauce
3/4 cup Land O Lakes® Fat Free Half & Half
1/4 cup shredded Parmesan cheese
1/4 teaspoon coarse ground pepper
1 (12-ounce) package frozen medium cooked, thawed, peeled, deveined shrimp
1/3 cup dried bread crumbs
2 tablespoons Land O Lakes® Butter melted
1/2 teaspoon dried Italian seasoning *

Steps:

  • Heat oven to 350°F. Cook pasta according to package directions. Drain.
  • Combine Alfredo sauce, half & half, Parmesan cheese and pepper in bowl. Add cooked pasta mixture and shrimp; gently stir to combine.
  • Spoon mixture into greased 2-quart round casserole. Cover; bake 40 minutes.
  • Toss together bread crumbs, butter and Italian seasoning. Sprinkle bread crumb mixture over pasta mixture. Continue baking, uncovered, 15-20 minutes or until bubbly.

This is from Southern Living. So good. I posted as written. However, if you can actually find "cream of shrimp soup" send me some as I have never seen it. NOTE: I sub 1 can cheese soup & 1 can cream of celery for the two cans of cream of shrimp and add some extra shrimp and I think it is good! Prep time includes time to cook rice and shrimp in skillet. :) Also, I will separate this into TWO casserole dishes, then cook one all the way (follow recipe through to the end) and the other I freeze right before sprinkling with cheese. I am jsut careful to eat it within about one month since there is seafood in the casserole. Also, sometimes I make half chicken/half shrimp or one of each. When I add chicken instead of the cream of celery soup I use cream of chicken. I always use the cheese soup. Really the possibilities are endless :) Also, add some cayenne pepper if you like it spicy! We ALWAYS add cayenne!
