1 (25-oz.) package frozen cheese ravioli
3 tablespoons butter
1 tablespoon olive oil
1 (8-oz.) package sliced fresh mushrooms
¼ cup finely chopped sweet onion
½ teaspoon kosher salt
½ teaspoon pepper
2 tablespoons chopped fresh parsley
2 tablespoons grated Parmesan cheese

Steps:

  • Cook ravioli according to package directions in a Dutch oven; drain and keep warm. Wipe Dutch oven clean.
  • Melt 2 Tbsp. butter with oil in Dutch oven over medium-high heat; add mushrooms and next 3 ingredients, and sauté 8 to 10 minutes or until vegetables are tender. Reduce heat to low, and stir in ravioli and remaining 1 Tbsp. butter, stirring until butter is melted. Add parsley, and toss gently to combine. Sprinkle with cheese, and serve immediately.
  • Note: For testing purposes only, we used Rosetto Cheese Ravioli.

1 pound cheese ravioli (fresh or frozen)
2 tablespoons olive oil
3 small zucchini, sliced into thin half-moons
kosher salt and pepper
2 cloves garlic, thinly sliced
½ cup grated Parmesan (2 ounces)

Steps:

  • Cook the ravioli according to the package directions. Drain them and return to the pot.
  • Meanwhile, heat the oil in a large skillet over medium heat.
  • Add the zucchini, ½ teaspoon salt, and ¼ teaspoon pepper and cook until just tender, 4 to 5 minutes.
  • Add the garlic and cook for 2 minutes.
  • Add the zucchini mixture and ¼ cup of the Parmesan to the ravioli and toss gently to combine.
  • Serve with the remaining ¼ cup of Parmesan.

Remove ravioli using a slotted spoon and place in a single layer on the sheet pan, then discard water. Place the pan over medium heat. Add oil, butter, and garlic; sauté until butter begins to bubble, about 1 minute. Add red pepper flakes, salt, and pepper; stir with a rubber spatula. Add half the ravioli and stir gently until well coated; immediately add balance of ravioli and repeat. Flip the ravioli gently as needed to prevent them from sticking. Cook ravioli until golden brown, about 5 minutes. Toss in spinach gently, then garnish with parsley and Parmesan. Serve immediately.
