This recipe comes from Jamie Oliver's Happy Days cookbook. Surprisingly enough the chicken is not overly salty, just moist because the salt crust keeps all the juices inside.

3 kg coarse rock salt
1/2 cup fennel seed, cracked
2 eggs, beaten
2 lemons, halved
1 tablespoon peppercorn
1 bunch fresh thyme
olive oil
1 (2 kg) whole chickens
1 bunch parsley, chopped
8 garlic cloves, skins left on, squashed

Steps:

  • Preheat the oven to 200 C or 400 degrees F.
  • Put all the salt into a bowl with the fennel seeds, eggs, lemon juice (save the juiced lemon skins), peppercorns and a wineglass of water and mix together.
  • Crush the thyme in a pestle and mortar and add a couple good glugs of olive oil.
  • Rub this flavoured oil all over your chicken, pushing any extra inside the cavity along with the parsley, garlic and squeezed lemon halves.
  • You want the cavity so full that no salt will be able to get in.
  • Get four long pieces of tinfoil and put them on top of each other to make a sheet around a metre square.
  • Lay on a third of the salt, spreading until it is about 1/4 inch thick.
  • Put your chicken on top, then pack the rest of the salt around it, making sure not to pierce the skin.
  • Carefully fold up the sides of the tinfoil and scrunch it at the top.
  • You can rip off any extra tinfoil.
  • Place the chicken in the preheated oven and cook for two hours.
  • Remove and allow to rest for 15 minutes.
  • Take it to the table, rip open the tinfoil and crack the salt crust.
  • It will fall apart easily and you will have a juicy chicken ready to serve.
  • A nice side dish is some horseradish, mixed with creme fraiche or some homemade mayonnaise and basil.

Traditional salt baked chicken

1 organic small chicken ( ,800g, remove the head and feet)
1.5 tsp. cooking salt
2000 g sea salt ( ,the amount of salt is very depending on your container)
1/2 tbsp. sand ginger powder ( ,I use freshly grounded)
1/2 tbsp. turmeric powder ( ,work as coloring)

Steps:

  • Remove the head and feet from the chicken and then rinse under running water. Then set aside and drain completely.
  • Message the cooking salt over the chicken, so we can give it a very faint salty taste. Mix sand ginger powder with turmeric powder and rub the mixture over the chicken. Marinate and set the chicken to slightly dry out.
  • In the meantime, fry the sea salt in a wok for 10 minutes until the salt are hot and dried out.
  • Wrap the chicken with large pieces of parchment paper. Make sure the chicken is 100% well packaged and then fix with a rope.
  • Get a clay pot or casting iron and place 3 cups of salt on the bottom. Place the chicken in and cover the the rest of the salt.
  • Heat over slow fire for 40 minutes, turn off fire and keep the chicken inside for another 30 to 40 minutes. Then dig the chicken out, remove the papers. Traditionally we have two ways of serving salt baked chicken, cutting into small chunks or hand shredding. I love the second method.
  • When the salt is cooled down, discard only dark colored ones at the bottom and save the rest for next time baking.

Salt is necessary to brine a protein. I could explain it scientifically but I am sure nobody wants to hear about osmosis/concentration gradients and hyper-hypotonic solutions. It's just necessary. We don't like salt at our house. I've been working on figuring out the mimimal amount of salt necessary that will still allow the flavors of the brine to penetrate the meat. We like a simple brine when roasting chicken. Sometimes we even brine a chicken prior to following another recipe calling for rubs or the addition of other spices. If you have herbs or spices you like it is simple to alter this recipe to fit those likes/dislikes. I'm still playing with this so comments would be more than welcome. But...here's where I am thus far.
