These bars are a grown-up spin on a campfire classic: buttery graham cracker crust, chocolate mousse, toasty meringue.

9 graham crackers (full-size rectangles)
¼ cup unsalted butter, cut up
1?¾ cups plus 3 tablespoons sugar, divided
4 ounces semisweet chocolate
4 ounces unsweetened chocolate
1 cup heavy cream
8 large egg whites
¼ teaspoon cream of tartar
¼ teaspoon kosher salt
1 teaspoon vanilla extract
1 teaspoon rum (optional)

Steps:

  • Preheat oven to 325°. Line a 9-inch square baking pan with two lengths of foil, crisscrossed, leaving some overhang. In a food processor, pulse crackers, butter and 3 tablespoons sugar to the consistency of damp sand. Pat firmly into bottom of lined pan. Bake until golden and fragrant, about 15 minutes. Cool on a wire rack.
  • Break up semisweet and unsweetened chocolate and place in a microwave-safe bowl. Zap in 30-second intervals, stirring after each, until just melted. Let cool.
  • In the bowl of a stand mixer fitted with whisk attachment, whip cream to stiff peaks. Transfer to another bowl and chill. Wash and dry mixer bowl and the whisk.
  • In the stand mixer bowl, combine egg whites, 1 3/4 cups sugar, the cream of tartar and salt. Set bowl over a pan of simmering water. Whisk by hand constantly until mixture reaches 165°, about 4 minutes. (Start checking temperature after 3 minutes.) Lift out bowl, dry the bottom and snap into mixer. Whisk on high speed to glossy, cool, stiff peaks, about 4 minutes. Add vanilla and beat 1 minute more to return to stiff peaks. Transfer half of this meringue to a separate bowl; set aside.
  • Gently fold cooled chocolate and the rum, if using, into remaining egg white mixture. Fold in whipped cream. Spread mixture over cooled crust. Top with reserved meringue, swirling with the back of a spoon.
  • Preheat broiler. Broil 4 to 5 inches from the heat 30 seconds to 1 minute. (Watch closely so it doesn't burn.) Chill at least 2 hours. To serve, grasp foil overhang and lift out onto a cutting board. Slice into squares.

1/2 cup unsalted butter, cut into pieces
2/3 cup packed light brown sugar
½ cup 2 per cent milk
1 teaspoon vanilla extract
1 ¼ cups graham cracker crumbs
32-48 whole graham crackers (amount depends on the brand)
2 ½ cups milk or semisweet (or mixed) chocolate chips or chunks
6 cups mini marshmallows

Steps:

  • Preheat the oven to 350 °F (180 °C). Lightly grease an eight or nine inch (20 or 23 cm) square pan with parchment paper so that it comes up higher than the sides by an inch or so.
  • Melt the butter in a saucepan over medium-low heat and whisk in the brown sugar, milk and vanilla, heating for just a minute to take the chill off the milk. Remove the pan from the heat and whisk in the graham cracker crumbs – this will make a fluid paste.
  • Lay a single layer of graham cracker crumbs to cover the bottom of the prepared pan. Spoon a third of the graham paste over the crackers, spreading a little (it does not have to cover the crackers completely). Sprinkle a third of the marshmallows on top followed by a third of the chocolate chips. Arrange a second layer of graham crackers over this and repeat with a third of the paste, marshmallows and chocolate chips, and repeat again with the remaining crackers, marshmallows and chocolate chips .
  • Bake the s’mores for 16-20 minutes, until the marshmallows have browned on top. If serving later, cool the pan on a rack and then chill completely.
  • To serve, portion the s’mores into squares and serve. The squares portion best when chilled, but can then be stored at room temperature for up to three days.
