This is a dish we enjoy having at the Seder, among all the other delicasies. Even when the Seder is catered my daughter insists on making it. I have never had a guest who hasn't asked for the recipe.

1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green pepper (sometimes I add mushrooms)
sauteed in vegetable oil
3 cups cut up cooked chicken
3 cups matzo farfel
3 cups chicken soup
salt and pepper
2 beaten eggs
salt and pepper

Steps:

  • mix all ingredients together.
  • bake in greased, covered 2 1/2 qt.casserole for 1 hr @350 (l80 c).
  • (I usually do not bake it covered.).

4 (4-ounce) boneless skinless chicken breast halves
2 tablespoons olive oil
1 teaspoon chopped fresh garlic
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons lemon juice
8 (1 cup) green onions, sliced 1-inch
1 (8-ounce) package sliced fresh mushrooms
Lemon slices
Fresh parsley

Steps:

  • Flatten each chicken breast half to about 1/4 inch thickness by pounding between sheets of waxed paper.
  • Heat olive oil in 10-inch skillet; add chicken, garlic, salt and pepper. Cook over medium heat, turning chicken occasionally, 5-6 minutes or until internal temperature reaches 165°F and chicken is no longer pink. Place chicken onto serving platter; keep warm.
  • Add lemon juice to drippings in pan. Cook, stirring constantly, 2-3 minutes or until heated through. Add green onions and mushrooms. Continue cooking 1-2 minutes or until heated through. Spoon mixture over chicken. Garnish with lemon slices and parsley.
