This is an "old fashioned orange cake" I have my dear Mother's recipe book(hand written) it is 70 years old! I think these recipes were exchanged with her sisters who were all from Polish decent)

2 oranges
250 g ground almonds
250 g sugar
6 eggs
1 teaspoon baking powder
2 cups confectioners' sugar
1 tablespoon orange juice (fresh not canned)
1 tablespoon orange-flavored liqueur or 1 tablespoon citrus peel
1 teaspoon melted unsalted butter

Steps:

  • Boil 2 oranges for 2 hours (this can be done the day before).
  • Chop the oranges into small pieces taking out any pits.
  • Put these into a food processor.
  • Add eggs and beat.
  • Then add ground almonds.
  • Then sugar.
  • And Baking Powder.
  • Beat all these together in food processor.
  • When mixed (keep an eye on the mix as it is a pretty full bowl) and stir occasionally to make sure it is all mixed.
  • Oil a 9 inch (23 cms) spring form pan and pour the mixture in and bake in a 185-190c (about 350 degrees F) for 1 hour.
  • check occasionally (depending on oven temperature as oven temps vary) and make sure the center is set.
  • When cold make this icing and spread on cake.
  • Icing-----------.
  • Whisk all together over hot water till liquid.
  • melts and is pourable.
  • Serve as is or with whipped cream.

6 slice(s) Smithfield Anytime Favorites Quarter Boneless Sliced Ham, any flavor
6 slice(s) french baguette, 3/4 inch thick
1/2 cup(s) butter, soft
1/2 cup(s) orange marmalade
8 eggs
1 tbsp. white vinegar
orange zest for garnish
2 egg yolks
1 whole orange, juiced
1 cup(s) unsalted butter, melted
1/2 tsp. kosher salt

Steps:

  • Begin by filling a large skillet with water half up the sides. Add vinegar and bring to a low simmer. While water is coming to a simmer, heat a large grill pan to medium hot. Spread butter on one side of each piece of bread. Grill bread and set aside to cool slightly. While bread is cooling, grill ham slices until heated through. Break eggs into the water to poach. Remove with a slotted spoon when the whites are cooked through but the yolks are still runny (approximately 3-4 minutes) and place on paper towels to drain. To assemble, spread grilled bread with orange marmalade. Top with 1 slice of grilled ham and one poached egg. Pour orange hollandaise over and garnish with orange zest.
  • Blender Orange Hollandaise: Put egg yolks, orange juice, and salt in a blender and pulse to combine. Place the butter in a microwave safe bowl and microwave until melted. With the blender running, gradually add the melted butter into the egg mixture until smooth and frothy. If the sauce is too thick add a teaspoon of warm water to loosen up.
