cream cheese, softened

shredded Cheddar cheese

3 tbsp.

butter, melted

2 tsp.

dried onion

2 tsp.

granulated garlic

2 tsp.

sesame seeds

2 tsp.

poppy seeds

Steps:

  • Preheat oven to 350° and grease a large baking dish with cooking spray. In a large bowl, beat eggs and milk until light and frothy. Set aside. In a large skillet over medium heat, cook bacon until crispy. Remove slices from pan to drain on paper towels. Pour out most of bacon fat but leave about 1 tablespoon in the skillet. Pour egg mixture in skillet then immediately turn down heat to medium-low. Stir occasionally with a spatula or wooden spoon. When the eggs are nearly set, season with salt and pepper and stir in chives. Remove from heat. Spread cream cheese onto the bottom halves of the bagels then place in greased baking dish, side by side. Spread egg mixture over bagels then crumble cooked bacon on top. Sprinkle with cheddar then add the bagel tops. Brush with bagel tops with melted butter and sprinkle with dried onion, granulated garlic, sesame seeds, and poppy seeds. Bake until the bagels are toasty and the cheese has melted, about 10 minutes. Serve warm.

Just whipped this up and it was so good I had to share it! The measurements are approximate as I did not measure anything. Use what looks good to you.

Yield 2 bagel sandwiches, 2-3 serving(s)

Number Of Ingredients 6

4 -5 eggs, beaten
1/4 cup feta cheese, crumbled
8 button mushrooms, sliced and pan fried
1 tablespoon minced garlic
2 -3 tablespoons low-fat cream cheese
2 whole wheat bagels

Steps:

  • Slice and pan fry mushrooms.
  • In a bowl, beat the eggs and then add the feta cheese, mushrooms, and garlic and mix well. Put this mixture in a preheated, greased small skillet. You want to use a small skillet, like an omlette skillet so the mixture cooks thick. Cover and let cook on medium to medium-high heat.
  • Meanwhile, cut your bagels and toast them. Add cream cheese to your liking.
  • Check on the eggs. The egg mixture is pretty thick, so I've found I've needed to lift the edges to let the runny stuff flow underneath to make sure the entire thing cooks through. Once the bottom side starts getting brown, use a spatual and flip the entire thing over. You may need to use two spatulas, but I was able to flip mine with little difficulty. Cover and cook the other side.
  • Once egg mixture is fully cooked, remove from skillet and cut in pieces. Place stategically on bagels and cut in half. Serve while warm. Enjoy!

  • Heat a large skillet over medium heat. Add the bacon strips and cook until golden brown, 6-8 minutes. Remove to a paper towel-lined plate and leave the grease in the skillet. Add the onion to the skillet and cook for 3-4 minutes, until slightly softened. Remove with a slotted spoon to a paper towel-lined plate. Meanwhile, cut the bagels into chunks, about 1-inch wide. In a large bowl, whisk together the eggs, half and half, kosher salt, black and cayenne pepper, parmesan cheese and parsley. Grease a 9-by-13-inch baking dish with butter or nonstick spray.  Place ½ of the bagel pieces into the dish. Crumble the bacon and sprinkle ½ of it over the bagels. Pour ½ of the egg mixture all over. Place all of the cooked onions evenly over top. Slice the block of cream cheese into 12 pieces and place the slices evenly over top of the bagel mixture. Repeat with a second layer of bagels, bacon and egg mixture. Cover with foil and refrigerate for 8 hours, or overnight. Preheat the oven to 350 degrees. Remove the casserole from the refrigerator and let sit at room temperature for 30 minutes. Bake for 50 minutes. Remove the foil and bake another 25-30 minutes until the top is golden brown, the center is hot, and the egg mixture is set. Let cool 15 minutes, then top with fresh dill. Serve immediately.
