A Delicious addition to your Mediterranean Recipes without the hassle of making your own

Number Of Ingredients 6

4 Bell Peppers (I prefer red)
2 garlic cloves
1/2 cup olive oil
1 tbsp olive oil
1 pinch salt
1 tbsp finely chopped parsley

Steps:

  • Cut the peppers into 4 parts removing the seeds and stems
  • Place under the grill / broil on a high heat with the skins face down for 5 minutes
  • Flip so the skin is upwards and cook until blackening 8-15 mins depending on your cooker
  • Transfer to a sealed jar or container and seal until completely cooled (this helps the flavours penetrate)
  • Remove the peppers and scrape the skin away then place the peppers back in container
  • Peel and finely chop the garlic and add to the peppers then add the remaining ingredients and refrigerate until ready to serve

4 red peppers
1 garlic clove
3 tablespoons olive oil
1 tablespoon white vinegar

Steps:

  • Quarter and clean pith from red peppers.
  • Spray skin side with olive oil mist.
  • Roast peppers under broiler 15-20 minutes, turning occasionally until skins are black.
  • Put peppers in a paper bag until cool.
  • Peel skins, (do not wash peppers) and put in a bowl.
  • Add smashed garlic clove, oil and vinegar.
  • Salt& pepper to taste.
  • Cover and let marinate at room temperature for 2 hours.
  • These can be made and stored in the fridge for a week. If the the oil creates a covering, simply microwave for 30 seconds. Best served at room temperature.
