This is another recipe from my Mother's file. I believe it was originally from Lipton. These veggies are good. We like to make them anytime, but especially for holidays.

Number Of Ingredients 5

2 pound(s) potatoes, peeled and cut in bite sized chunks
4 - carrots, sliced in bite sized chunks
1 - envelope lipton onion soup mix
1/2 cup(s) olive oil
- salt and freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees.
  • Mix potatoes, carrots and other ingredients in a large plastic bag and shake well to mix.
  • Pour vegetables into a 9 by 13 inch baking pan. Arrange evenly in pan.
  • Bake uncovered, stirring occasionally, for 40 minutes or until potatoes and carrots are well roasted, tender and golden brown. Enjoy amazingly delicious roasted potatoes and carrots!

I came up with this recipe after having done a search on Zaar and came up empty handed. It is a simple recipe and turned out exactly as I had hoped. I hope it will work for you as well as it did for me!

Number Of Ingredients 6

5 large carrots, cut diagonally into 1/2 inch slices (or use baby carrots)
4 medium white potatoes, cut into bite-sized chunks
1 medium vidalia onion, cut into eighths
2 cloves garlic, diced
6 tablespoons butter, melted
salt & pepper

Steps:

  • Preheat oven to 425 degrees.
  • Combine carrots, potatoes, onion and garlic with melted butter in 8x8" square glass pan.
  • Season generously with salt and pepper, toss.
  • Cover pan with aluminum foil and bake for 45 minutes.
  • Uncover, stir and continue baking for another 30 minutes (or until browned to your satisfaction), stirring occasionally to lift bottom portions to top to allow to brown and crisp.

I just purchase a small bag of baby carrots and use the whole bag for this, or use regular peeled carrots cut into about 2-inch chunks. Try to use a good quality olive oil for this. After you have been making this for a while you will know just how much to adjust your salt and garlic, the amounts listed are about the amounts I use when I make this, but all ingredients can be adjusted to suit taste, if you are a garlic-lover use lots of garlic, after cooking the garlic flavor will mellow and will not as strong, so don't be intimated by 8 cloves! This can be made hours in advance and just rewarmed. If you find that the baby carrots are done before the potatoes just remove them to a bowl. I make this very often, it is a simple side dish with lots of flavor, I roast all of my root veggies using the same method and ingredients, rutabagas, parsnips, beets, large chunky size carrots and even sweet potatoes or yams, just peel them and chop into 2-inch pieces (larger size for yams). This is a fantastic side dish, simple and delicious!

ROASTED POTATOES, CARROTS, AND ONIONS RECIPE BY JOHN ...
This is a great side dish for roast beef, pork, or lamb. It would also be great with any grilled meat. The recipe is adapted from an America's Test Kitchen recipe that included brussels sprouts and excluded the onions. I love the flavor that the caramelized onions add to the potatoes and to the gravy if you make it, so I think they are a must. Adding the brussels sprouts might be nice too if you aren't already serving another green vegetable as a side.

  • Preheat an oven to 350 F. Combine the potatoes, carrots, and water in a large bowl. Cover and microwave on hi for about 10 minutes. Remove and let cool. Dump out water and season the potatoes and carrots liberally with kosher salt and pepper. Place the potatoes, carrots and onions in a roasting dish lightly sprayed or rubbed with olive oil. If you are roasting meat, place the onions and as many carrots and potatoes as you can fit loosely around the roast. Do not crowd the meat so much that air cannot circulate around the roast. Place any remaining vegetables in a separate lightly oiled roasting dish next to the roast. Roast the vegetables for a minimum of 45 minutes (and up to 2 hours if cooking with a large roast). Remove and serve. The key trick I took from this recipe was microwaving the carrots and potatoes before roasting them. I found that the outside of the potatoes was less tough, and the inside more tender, than when I have roasted potatoes in the past without microwaving them. Give this technique a try and I think you will be very happy with the result!
