3 tablespoons black Tea
1 bunch mint
12 tablespoons Peach liqueur
12 After Eight (for garnish)

Steps:

  • Bring 1 liter (approximately 4 1/4 cups) water to a boil. Add tea leaves and let steep about 3 minutes. Pour tea through a fine sieve into a shallow dish. Rinse mint sprigs (reserving up to six for garnish) and add to tea. Let cool.
  • Remove mint from tea and pour into a shallow metal tray. Freeze 6-8 hours, stirring with a fork after about 2 hours to prevent large ice crystals from forming. Thereafter, stir mixture every hour.
  • Divide tea granita among glasses, top with peach liqueur and serve garnished with remaining mint sprigs and chocolate mints.

3 cups water
3 English breakfast or other black tea bags
½ cup sugar
2 tablespoons fresh lemon juice (about 2 lemons)
2 tablespoons honey

Steps:

  • Bring 3 cups water to a boil in a medium saucepan; remove from heat. Add tea bags; cover and steep 10 minutes.
  • Remove and discard tea bags. Add sugar, stirring until dissolved. Add lemon juice and honey, stirring until honey dissolves. Place pan in a large ice-filled bowl for 5 minutes or until cool, stirring occasionally.
  • Pour tea mixture into an 11 x 7-inch glass or ceramic baking dish. Cover and freeze until partially frozen (about 1 hour). Scrape with a fork, crushing any lumps. Freeze, scraping with a fork every 30 minutes, 1 hour or until completely frozen.
