Steps:
- To make the onion purée, bring a small pan of water to the boil and add half the roughly chopped onion. Boil until soft (about 10 mins), drain and puree with a hand blender or mini food processor.
- Heat a large saucepan on a high heat. Once it's hot add the oil and finely chopped onions and reduce to a low heat. Cook the onions slowly and gently until golden brown in colour, and season.
- Add the ginger and garlic purée, curry powder, turmeric, chilli powder and a splash of water to the pan of onions and stir in well. Fry for a couple of mins. Add the diced chicken thighs and stir in well.
- Mix the yogurt, tomato purée and onion purée together in a jug with 300ml water. Pour into the saucepan and mix well. Turn up the heat until the sauce begins to boil. Simmer for 15 to 20 mins, stirring occasionally.
- Finally, sprinkle in the garam masala and stir in well for the final 2 mins before serving.

Bhunas are characterised by a thick, deliciously intense coating sauce with a well-spiced but moderate heat, perfect for warming the cockles on a chilly winter evening. Serve with fluffy basmati rice and some homemade roti. This is a rugged spicy dish usually prepared with scanty gravy and roasted whole spices which clearly visible on the face of the dish. The differences between Kadai Chicken and Chicken Bhuna Masala are very minute. The use of whole & roasted spices & the absence of Capsicum are the only notable differences in cooking. However, they taste very different due to the different treatment of spices.

Steps:
- Wash chicken add salt and turmeric marinate for 30 mins
- In pan add coriander seed, red chili, cloves and cardamom, cinnamon cumin, funnel seed roast well
- In pan add ghee and add chicken saute and cook for 10 mins
- Now chicken is half cooked and keep aside.
- Now heat pan add oil saute onion one dry chili and ginger garlic paste.
- In mean time ground the roast mixer as fine powder
- Now add salt and tomato puree mix well cook for 2 mins
- Now add curd mix well cook for 2 mins
- Now add Ground spice powder and mix well close lid and cook for 10 mins in medium flame
- Now check the chicken is cooked well. when oil ooze out of the chicken turn off
- Now its ready to serve Bhuna Chicken

- In a large pan over medium heat, heat vegetable oil and melt butter together. Add onion and jalapeño and cook until soft and onions are beginning to take on colour, 6 minutes. Add garlic and ginger and cook until fragrant, 1 minute more. Add garam masala, chilli powder, cumin, coriander, and turmeric and stir frequently to toast spices, 1 to 2 minutes more. Add tomato pureé and cook until it has darkened in colour, 2 minutes. Add tomatoes and water and bring to a simmer. Cook until thickened slightly, 3 to 5 minutes, then stir in chicken. Season with salt and bring back to a simmer. Cook, stirring occasionally, until chicken is tender and sauce is thick, 20 to 25 minutes. (If sauce becomes too thick, add 60ml of water at a time to loosen.) Remove from heat, garnish with coriander, and serve with lemon wedges on the side.
