3 garlic cloves, minced
3 tablespoons extra-virgin olive oil
1 tablespoon chopped thyme
1 tablespoon chopped rosemary leaves
One 4-pound pork rib roast cut from the loin end, chine bone removed
Salt and freshly ground pepper

Steps:

  • In a small bowl, blend the garlic with the olive oil, thyme and rosemary. Rub the herb paste all over the pork roast and let stand at room temperature for 2 hours or refrigerate overnight.
  • Preheat the oven to 500°. Set the pork in a small roasting pan and season with salt and pepper. Roast the pork for 15 minutes, then reduce the oven temperature to 325°. Continue roasting the pork for 40 minutes longer, or until an instant-read thermometer inserted in the thickest part of the meat registers 155°. Transfer the pork to a carving board and let stand for about 10 minutes. Cut between the ribs, transfer the chops to plates and serve.

This recipe comes from Trevor Kaufman, who brought it back with him from a trip to Italy. Ask the butcher for a roast with the chine and rib bones, as it will make for a more flavorful and better-looking dish. 1/2 cup finely chopped rosemary
2/3 cup plus 2 tablespoons extra-virgin olive oil
Coarse sea salt and freshly ground pepper
One 6-pound bone-in pork loin rib roast, chine bone intact
2 cups coarsely chopped flat-leaf parsley
2/3 cup chopped mint leaves
4 garlic cloves, finely chopped
2 tablespoons fresh lemon juice

Steps:

  • In a small bowl, mix the rosemary with 2 tablespoons of the olive oil and season generously with salt and pepper. Spread the rub all over the pork and into the space between the partially detached roast and the rib bones. Using kitchen string, tie up the roast to give it a nice shape. Transfer the pork to a roasting pan, cover with plastic wrap and refrigerate overnight.
  • Remove the pork roast from the refrigerator and let stand at room temperature for 1 hour before roasting. Preheat the oven to 400°. Roast the pork for about 1 1/2 hours, or until an instant-read thermometer inserted in the thickest part registers 135° for medium. Let the pork roast stand for 20 minutes before carving into chops.
  • Meanwhile, in a food processor, combine the parsley with the mint, garlic and lemon juice and pulse until finely chopped. With the machine on, slowly pour in the remaining 2/3 cup of olive oil until the sauce is smooth. Season the herbs with salt and pepper.
  • Untie the roast and carve it into chops. Transfer the chops to a platter, top with some herb sauce and serve the remaining herb sauce on the side.

  • In a small bowl mix the warm water, sugar and lime juice until the sugar is dissolved. Use a brush or pour into a spray bottle to baste or spritz the pork lightly while cooking, starting 20 minutes into the cooking time and continuing every 15 minutes until done. Remove from the grill when a thermometer inserted in the center (avoiding bone) rapidly reaches 145 to 150 degrees F, about 1 hour 30 minutes total. Remove and cover lightly with aluminum foil and allow to rest 15 to 20 minutes before slicing and serving.

I started not to post this recipe, but realized that some cooks are a little intimidated with a BONE IN PORK ROAST, & it really is very simple with a few key elements to know first hand. PLEASE MAKE SURE YOU ASK THE BUTCHER TO CRACK THE BASE BONE on the roast, so that after cooking, all you need do is cut between each rib, for easier serving. This roast was 3 1/2 pounds,& was 4 chops, & was on sale, & because I bought so many @ $1.88 per pound, I naturally assumed that the base bone was already cracked, but though they usually do, they did not crack them for the sale SO ASK them to do so

  • Allow Roast to rest about 10 minutes, tent top with foil. Then WITH A VERY SHARP KNIFE, SLICE BETWEEN EACH RIB BONE, DOWN TO THE BASE. If the base was not cracked before hand you will need to work your way around the base to get each chop loose. But it is much easier if the base bone has been cracked by the butcher at the store level. As you can see I did get the chops separated but not without a lot of effort on my part. The Moral of the story is to ASK THE BUTCHER TO CRACK THE BASE BONE AT STORE LEVEL, EVEN WHEN THEY ARE ON SALE. IT WILL MAKE YOUR JOB SO MUCH EASIER AT THE DINNER TABLE. Smile
