- For the goat's cheese, walnut & roasted pepper sandwiches, mix together 200g soft goat’s cheese with 100g cream cheese. Spread most of the mixture over 5 slices white bread. Slice 2 roasted red peppers into strips, divide between the bread, then top each with another slice white bread. Trim the crusts, then cut each sandwich into 4 triangles. Whizz 25g walnuts until fine. Spread 1 edge of each sandwich with the remaining cheese mix, then dip into the chopped walnuts.
- For the lemony cucumber & prawn sandwiches, lightly spread 6 slices wholemeal bread with butter. Cover with a layer of thinly sliced cucumber, then use a 5-6cm round cutter to stamp out 12 circles. Mix together 4 tbsp mayonnaise with zest 1 lemon. Top each circle with 1 halved large cooked prawn and a dollop of the lemony mayonnaise.
- For the creamy egg & cress sandwiches, boil 4 eggs for 8 mins. Cool the eggs, peel, mash, then mix with 2 chopped spring onions and 2-3 tbsp crème fraîche. Season, then spread over 12 small rolls. Add a little cress, pop on the lids and serve.

- Lay out 8 slices of bread and spread them all with a thin layer of herb butter. Place smoked salmon on 4 of the slices. Top with the other 4 slices of bread, butter side down. Place the sandwiches on a baking sheet and wrap with plastic. Refrigerate until the butter is very cold. Place the sandwiches on a cutting board. With a very sharp knife, cut off the crusts, cut each large sandwich in half crosswise, and then cut each half diagonally twice to make a total of 8 small triangles. (If the bread was cut crosswise, follow the assembly directions, then cut off the crusts and cut diagonally, twice, to make 4 small triangles.) Serve chilled.

- I remove about 4 fish fingers from the freezer and grill them on each side until crispy and golden. While that's happening, I butter 2 bits of nice soft white bread or a white roll, smearing one half generously with tomato ketchup. When the fish fingers are done, I remove them from the grill and place them on the bread smeared with ketchup. The most important bit is to put the other bit of bread on top and, using a little force, push down on your buttie which, for some reason, seems to make it taste even better. And that's it – all done.
- I tend to eat one of these while I'm walking about at home and I always get told off by the missus for dropping bits everywhere. You'll notice from the picture that I've put a handful of rocket in the sandwich, which isn't really necessary but it does make it look a bit more posh. I was a bit embarrassed to tell the photographer he had to shoot a fish finger sandwich, so I told him it was 'lemon sole goujons' – what a prat I am! Be proud to eat fish fingers, that's what I say.
