COUNTRY FRIED STEAK AND MILK GRAVY RECIPE | ALLRECIPES
I have been making this for years and my family just loves it. The gravy is great served over the steak, or on mashed potatoes.

Steps:
- Season meat with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper; set aside. In a shallow dish, mix flour with 1 teaspoon of the pepper. Dredge each steak in flour. Dip in beaten egg, then dredge in flour again.
- Heat lard in a large, heavy skillet over medium-high heat. Fry steaks 3 to 4 minutes on each side, or until golden brown. Drain on paper towels.
- Pour off all but 2 tablespoons of the fat. Sprinkle 2 tablespoons of the dredging flour into oil. Cook over medium heat for 1 minute, scraping up any browned bits from the bottom of skillet. Gradually whisk in milk. Cook, stirring frequently, 3 to 4 minutes, or until thickened and bubbly. Add 1/4 teaspoon salt, and 1/4 to 1/2 teaspoons pepper; gravy should be quite peppery.

- Prepare your breading station by placing the flour, beaten eggs, and pancake mix in separate bowls. Dredge each steak in the flour, dip in the egg and finally coat in the pancake mix.
- Heat up half of your oil in a skillet over medium heat. Add the steak, one at a time, and pan-fry for 4 to 5 minutes on each side.
- Set the steaks aside to cool.
- For the gravy, make a roux with the remaining oil. Add the flour and stir.
- Once it is lightly brown and gives off a nutty smell, add in the milk and whisk until it combines evenly.
- Bring to a simmer and continue simmering for 8 to 10 minutes until thickened.
- Adjust seasoning with salt and pepper, then pour over the steaks.
- Garnish with parsley and serve with vegetables and potatoes done to your preference.

At the end of the line, place a clean plate, ready for the breaded steak. Take the first steak and sprinkle both sides with kosher salt and pepper. Coat it in the flour mixture, then place in the milk/egg mixture, coating thoroughly. Finally, place it back into the flour mixture and turn it, making sure it is well coated. Place on the clean plate, then repeat with the other steaks. Heat the oil and butter over a medium heat in a large skillet. Test by dropping in a few sprinkles of flour, which will sizzle when the oil is hot enough. When the oil is ready, add 3 pieces of the steak at a time and cook until the edges start to look golden. This will take around 2 minutes each side. Place the meat on a plate lined with paper towels and keep warm whilst you cook the rest. Once all the steak is cooked, pour the grease from the pan into a heatproof bowl and return the skillet to the stove (don't clean it first). Whisk the flour into the grease, which will create a golden brown paste (roux). If it looks too greasy, add a little extra flour. If it seems too clumpy, add a little more grease.
