Nonstick cooking spray, for the pans
3 large eggs, separated
1/2 cup plus 2 tablespoons sugar 
2 sticks (1 cup) unsalted butter, at room temperature 
6 ounces almond paste, chopped 
1/2 teaspoon kosher salt  
1 1/2 teaspoons lemon juice 
1/2 teaspoon almond extract 
1 1/3 cups all-purpose flour 
1/2 teaspoon green liquid food coloring 
1/2 teaspoon red liquid food coloring 
3 tablespoons apricot or raspberry jam 
4 ounces dark chocolate 

Steps:

  • Preheat the oven to 350 degrees F. Grease three 8-by-4-inch loaf pans and line them with parchment paper that comes at least 2 inches up the long sides of the pan. If you don't have 3 loaf pans, you can bake the layers in batches.
  • In a large bowl or in a stand mixer fitted with a whisk attachment, beat the egg whites to soft peaks. With the mixer running on medium, gradually add 2 tablespoons of the sugar. Increase the speed to medium high and beat to stiff peaks. Set aside.
  • In a large bowl or in a stand mixer fitted with a paddle attachment, beat together the butter, almond paste, salt and remaining 1/2 cup sugar on medium-high speed until light and fluffy, 2 to 3 minutes. Reduce the speed to medium and add the yolks one at a time, beating well after each addition. Beat in the lemon juice and almond extract, then reduce the speed to medium low and gradually add the flour. Mix to combine. Use a rubber spatula to fold in the whites.
  • Transfer one-third of the mixture to one of the loaf pans and use a small offset spatula to spread it out evenly. Transfer another third of the mixture to a separate bowl and fold in the green food coloring. Fold the red food coloring into the remaining third. Transfer these into the remaining 2 loaf pans, spreading them out evenly.
  • Bake until the tops are just set and no longer shiny; begin checking for doneness at 12 minutes. Let cool in the pans for 5 minutes, then lift them out and place on a wire rack to cool completely.
  • Stack up the loaves (from bottom to top: green, white, red) with 1 1/2 tablespoons jam between the layers. Wrap the loaf firmly in plastic wrap and refrigerate for at least 4 hours and up to overnight.
  • Melt the chocolate in a double boiler or by microwaving it in 30-seconds increments, stirring after each. Remove it from the heat and stir continuously until it is no longer hot. Spread it over the top and sides of the cookie loaf and refrigerate to firm up for about 15 minutes. Cut into 1-inch squares.

1 cup sugar
3-1/2 ounces almond paste, cut into small pieces
1 cup all-purpose flour
1 cup butter, melted and cooled
1/2 teaspoon salt
1/2 teaspoon almond extract
6 to 8 drops red food coloring
6 to 8 drops green food coloring
1/4 cup seedless raspberry jam
GLAZE:
1 cup semisweet chocolate chips
1 teaspoon shortening

Steps:

  • Preheat oven to 375°. In a large bowl, beat eggs and sugar 2-3 minutes or until thick and lemon-colored. Gradually add almond paste; mix well. Gradually add flour, butter, salt and extract., Divide batter into thirds. Tint one portion red and one portion green; leave remaining portion plain. Spread one portion into each of three well-greased 11x7-in. baking dishes., Bake 7-11 minutes or until a toothpick inserted in center comes out clean and edges begins to brown. Cool 10 minutes before removing from pans to wire racks to cool completely., Place red layer on waxed paper; spread with 2 tablespoons jam. Top with plain layer and remaining jam. Add green layer; press down gently. , For glaze, in a microwave, melt chocolate chips and shortening; stir until smooth. Spread half over green layer. Refrigerate 20 minutes or until set. Turn over; spread remaining glaze over red layer. Refrigerate 20 minutes or until set. , With a sharp knife, trim edges. Cut rectangle lengthwise into fourths. Cut each portion into 1/4-in. slices.

The layers are traditionally red, white and green to resemble the Italian flag, but, of course, you can play around with the colors depending on the holiday and what you have on hand. This version is adapted from Mary Carpino, from Briarcliff Manor, N.Y., who made them every Christmas for years. One of her granddaughters, Nicole Carpino Frasco, passed along the recipe to us.   • 1) Preheat the oven to 350 degrees. Line 3 9x12 baking sheet (or 13x9 baking sheets which is what I used) with parchment paper and spray well with some non stick spray, set aside. 2) Break up the almond paste into large chunks, place them in a bowl and set aside. 3) In the bowl of a standing mixer, add the almond paste and let it mix on medium speed for 1 minute, add the sugar and continue to mix for 3 to 4 minutes or until the almond paste and sugar have combined and the mixture resembles coarse sand. Meanwhile, in a large bowl, using an electric whisk, whisk the egg whites to stiff peaks and set aside. 4) Add the butter and mix for 2 minutes, add the egg yolks and mix just long enough to combine. 5) Add the flour and salt, mix until they are incorporated then by hand fold in the egg whites. 6) Remove 1/3 of the batter and smear it evenly in the prepared baking sheet and set aside. 7) Divide the remaining batter into two bowls, add green food coloring to one and red to the other. Mix until you achieve the intense color you?re looking for and smear each in the prepared baking sheets. 8) Bake them for 8 to 10 minutes or until fully cooked through and allow them to cool completely. 9) Add the jam in a microwave safe bowl and pop it in the microwave for about 40 seconds just to loosen it up a bit. 10) Smear half of the apricot jam evenly over the red layer (keep the red cookie base in the same baking sheet) top it with the plain layer (make sure you remove the parchment paper from the bottom) and smear the remaining apricot over the whole surface. 11) Top with the green layer (remove the parchment paper from the bottom) wrap the whole thing in a few pieces of plastic wrap, place one of the baking sheets on top of them and weigh it down with a few cans, pop it in the fridge to set for either 4 hours or overnight. 12) In a large microwave safe bowl, microwave the chocolate using the melted chocolate setting on your microwave making sure to give it a stir every 15 seconds. 13) Once fully melted, stir in the vegetable oil and smear the chocolate all over the surface of the cookie base (the green layer) and pop it back in the fridge to set completely, about an hour. 14) Slice into squares using a serrated knife and serve.

  • Preheat oven to 350°. Grease three 9”-x-13”pans with cooking spray and line with parchment paper leaving a 2” hangover on each side. In a large bowl using a hand mixer, beat almond paste and ¾ cup sugar together until light almond paste is broken into smaller pieces and looks crumbly. Add butter and beat until light and fluffy. Add egg yolks and almond extract and beat until incorporated. Add flour and salt and beat until just combined.  In another large bowl, beat egg whites until foamy, then slowly add in remaining ¼ cup sugar while beating and continue beating until stiff peaks. Add about ? of the egg whites to the batter and gently fold in until combined, then add the rest of the egg whites and continue gently folding until fully combined. Divide batter evenly into 3 separate bowls. Dye one bowl of batter red and another bowl green, leaving the third one plain. Add batters to prepared pans and use an offset spatula to spread into an even layer.  Bake until no longer shiny and feel just slightly soft when pressed with a finger, 12 minutes. The cakes should be starting to peel from the edges and barely any color will be gained. Let cool 10 minutes in pan, then use the parchment to help lift out and place on cooling racks. Let cool completely.  To assemble the cakes, place a piece of parchment paper over the green layer, then invert layer onto a board. Peel off top piece of parchment paper. Spread warmed apricot preserves over green layer.  Invert white layer onto another board and peel off parchment paper. Gently slide it on top of green layer. Spread warmed raspberry preserves over white layer. Finally, invert red layer onto another board, peel off parchment and gently slide on top of white layer. Place a piece of parchment paper on top of red layer, then place a baking pan on top of parchment.  Weigh down the pan with cans and refrigerate for at least 2 hours or up to overnight.  When ready to coat in chocolate, remove from refrigerator while you temper your chocolate. To temper your chocolate, place ¾ cup chocolate chips into a microwave safe bowl. Microwave in 30 second intervals, stirring after each one, until chocolate is smooth and reaches between 113° and 118°. Microwave in 5 to 10 seconds bursts as needed to hit your desired temperature. Add remaining ½ cup of chocolate chips a little at a time, stirring until completely melted between additions. Keep stirring until your chocolate reaches 88° or 89°. You can add a little more chocolate as needed to help cool your chocolate down, making sure the new chips melt completely before adding any more.  Add about half of your tempered chocolate on top of the red layer, and working quickly so it doesn’t set, use an offset spatula to spread into an even layer. Refrigerate until chocolate is completely set, 30 minutes.  If your chocolate hardened while the first layer was chilling, microwave in 10 second bursts until smooth and chocolate reaches 89° again. Once chocolate is set, invert onto another board and spread remaining chocolate over the green layer. Refrigerate until chocolate is set or until ready to serve, 30 more minutes.  Using a large knife, trim edges of cakes to get clean sides, then cut into 28 pieces.
