Rocco DiSpirito's Kale Chips

Number Of Ingredients 5

1 bunch curly kale
washed
Olive oil cooking spray
Salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 300F
  • Place 1 kale leaf on a cutting board
  • Using a small, sharp knife, cut the middle vein and stem from the leaf and discard
  • Repeat for the remaining kale leaves
  • Line 2 large baking sheets with aluminum foil and place a wire rack on top of each sheet
  • Evenly distribute the kale in one layer on each rack
  • Coat the kale lightly with 4 seconds of olive oil spray, then carefully sprinkle salt and pepper over the kale
  • Place in the oven and bake until crisp, about 15-20 minutes

8 dinosaur kale leaves, stemmed
1 tablespoon EVOO
Sea salt and freshly ground pepper
1 lemon, for zesting

Steps:

  • Preheat the oven to 375 degrees Rub the kale with the EVOO, evenly coating both sides; cut into 2-inch pieces.
  • Spread out the pieces evenly on 2 parchment-lined baking sheets; season with salt and pepper. Bake, rotating and switching the pans halfway through cooking, until crisp, about 8 minutes.
  • Zest the lemon over the hot chips.

  • Remove stalks from the greens and discard. Slice leaves very thinly across and reserve.Bring a pot of water to a boil for pasta. Once boiling, salt the water and cook pasta to 1 minute shy of al dente, reserving 1 cup of starchy water just before draining.Heat a very large skillet with EVOO, 6 turns of the pan, over medium heat. Melt anchovies into oil until they completely break down then turn heat back a little and add garlic and chili flakes. Stir a minute, add vermouth, wine or stock then wilt in kale and turn heat to low.In a smaller skillet, heat a drizzle of EVOO over medium heat. Chop nuts and add to pan to toast. When nuts are golden, season with oregano, lemon zest and salt.Toss pasta and starchy cooking liquid with kale and garlic oil, and adjust salt and chili flakes to taste. Serve pasta in shallow bowls topped with chopped toasted nuts.
