Steps:
- Blend the adobo peppers, fajita seasoning, vinegar and water in a food processor until smooth.
- Pour in a large plastic bag, with the chicken breasts, and let marinade for at least 1 hour.
- Set the grill between low to medium low heat and slowly cook the chicken for 15 minutes or until it’s fully cooked.
- Move the chicken off of the grill and let it sit for 5 to 10 minutes.
- Cut the chicken into 1/2-inch pieces.
- Using a griddle or large skillet, heat the large flour tortillas, building the quesadilla with cheese, tomato and chicken on the griddle, then sprinkle with cheese and cover with the top tortilla.
- Let the tortilla cook for 1 minute, then flip to cook other side.
- Top with cilantro and pair with salsa.

- Heat oil in a nonstick skillet, add one tortilla. Layer with half the cheddar cheese, all of the chicken and mushrooms and half the Monterey Jack cheese. Top with the second tortilla. Cover and heat until cheese melts and bottom tortilla is crisp and golden brown., Turn over; sprinkle remaining cheese on top. Cook until bottom tortilla is crisp and golden brown and cheese is melted. Cut into wedges; serve with sour cream and salsa if desired.
