Steps:
- Beat butter until creamy. Beat in cocoa, mixing until combined. Stir espresso into vanilla extract then mix into the cocoa/butter mixture. Scrape down sides and bottom of bowl. Add powdered sugar, 1 cup at a time, alternating with milk. Beat each time until combined, scraping down the bowl as needed. Once all of the milk and sugar has been added, increase mixer speed and beat until fluffy. Add more sugar or milk as needed for consistency.

Steps:
- Preheat oven to 325°F.
- Prepare a 10 – 12 cup (9 – 10 inch) bundt pan by greasing it very well with oil or butter. Set aside.
- In a large bowl combine the sour cream, oil, and milk.
- Beat in the eggs.
- Add the cake mix and pudding mix and gently mix until fully incorporated. Do not overmix.
- Pour the batter into the greased bundt pan. Smooth the top into an even layer.
- Bake for 40 – 45 minutes until a toothpick inserted deeply in the center comes out clean, then again on the opposite side.
- Cool in pan 20 minutes then remove by placing a large plate over the top and flipping it right side up. If cake doesn’t fall out right away, give the pan a few light taps until it does.
- Let cake cool completely for about an hour or at least until no longer piping hot before frosting.
- Top with frosting or glaze of choice. Decorate with sprinkles if desired.
- Serve at room temperature or fridge cold.

- In large bowl, whisk flour, sugar, baking powder, and salt. Add milk, butter and, egg; stir until flour is moistened. Heat 12-inch nonstick skillet or griddle over medium heat until drop of water sizzles; brush lightly with oil. In batches, scoop batter by scant 1/4-cupfuls into skillet, spreading to 3 1/2 inches each. Cook 2 to 3 minutes or until bubbly and edges are dry. With wide spatula, turn; cook 2 minutes more or until golden. Transfer to platter or keep warm on a cookie sheet in 225°F oven. Repeat with remaining batter, brushing griddle with more oil if necessary.
