3 pounds chicken pieces (thighs, legs, breasts, and wings)
1 cup buttermilk
2 teaspoons hot sauce
3 cups purpose flour
1 egg
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
2 teaspoons paprika

Steps:

  • 1.Gather the ingredients—Preheat the fryer to 350 degrees F.
  • 2.Whisk together the buttermilk and egg in a shallow bowl.
  • 3.Whisk together the flour, salt, pepper, chili powder, paprika, and cayenne pepper in another shallow bowl.
  • 4.Dip the chicken pieces in the buttermilk mixture and then dredge in the seasoned flour mixture. Repeat this process with all chicken pieces until they coat with breading.
  • 5.Place breaded chicken pieces on a baking sheet in a single layer and refrigerate for at least 2 hours to let the bread set.
  • 6.Fry chicken in batches until golden brown, about 10 minutes per batch.
  • 7.Drain on paper towels and serve hot.

Number Of Ingredients 5

2 cups self-rising flour
4 boneless, skinless chicken breasts
1 cup buttermilk
2 eggs, beaten with 1 teaspoon of water
Vegetable oil for frying.

Steps:

  • 1. Mix 2 cups of self-rising flour and 4 teaspoons salt in a large bowl. Add 4 tablespoons of lard, which is also in the large bowl. It would help if you had a course meal that resembles cornmeal.
  • 2. Wash and dry the chicken breasts. Cut into 1-inch wide strips.
  • 3. Put the chicken strips in a large bowl, and season each side with salt and pepper, to taste. Add some paprika if you prefer its smoky flavor. Pour 1 cup of buttermilk over the chicken pieces so that they soak it all up evenly. If you have time, let them soak for about an hour in the refrigerator until you are ready to cook them.
  • 4. Add the egg mixture and beat it well in a separate bowl. Dip the chicken pieces into the egg mixture and then in the flour, coating each piece with a thick layer. The wider you cover the chicken pieces, the crispier they will be. You can even roll them around to get an even coating so that they are very thick, making fried chicken crispy on the outside and tender on the inside.
  • 5. Heat oil in a deep skillet or pot over medium-low heat until it is smoking hot. Make sure you don’t use a pot that is too large cause it can create oil splatters. Fry the chicken pieces in batches to avoid overcrowding. Use a spoon to ensure each part reaches the same level in the pot so that they cook evenly.
  • 6. Turn the pieces when golden brown and crispy. They will have reached an internal temperature of 160 F (71 C). Each batch of chicken pieces should take about 10 minutes, depending on how many you are frying at one time.
  • 7. Remove the fried chicken pieces with a slotted spoon and drain them on paper towels.
  • 8. Place them on a plate and season with some salt, if you like, to taste.
  • 9. Serve them with mashed potatoes, macaroni salad, and sour cream biscuits, and enjoy.
