2 tbsp (30 ml) Dijon mustard

4 catfish fillets (6 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
2 large eggs
1/3 cup Dijon mustard
2 tablespoons 2% milk
1/2 cup all-purpose flour
4 cups honey mustard miniature pretzels, coarsely crushed
Oil for frying
Lemon slices, optional

Steps:

  • Sprinkle catfish with salt and pepper. Whisk the eggs, mustard and milk in a shallow bowl. Place flour and pretzels in separate shallow bowls. Coat fillets with flour, then dip in egg mixture and coat with pretzels., Heat 1/4 in. oil to 375° in an electric skillet. Fry fillets, a few at a time, until fish flakes easily with a fork, 3-4 minutes on each side. Drain on paper towels. Serve with lemon slices if desired.

  • Preheat oven to 450 degrees. Add pretzels and walnuts to a food processor and blend until they are small crumbs. (If you don’t have a food processor you can crush the mixture with a rolling pin in a ziplock bag.) Empty the crumbs into a small bowl and add the lemon pepper. In a sauce pan add 1 Tbsp of butter and melt it over medium heat. In another bowl add the other 1 Tbsp of butter and put in the microwave until melted about 15 seconds. Pat the halibut with a paper towel on both sides. Sprinkle both sides with salt. Brush both sides of the halibut with the melted butter. Pat down both sides of the halibut generously with the pretzel walnut mixture. Put it into the sauce pan and cook for about 45 seconds on each side just to get a good sear. Place in the oven for 8 minutes flipping half way through the cooking time. Serve over rice or greens. *Cooking time may vary ~ Cook in the oven for 10 minutes per 1/3 inch thickness*
