Potluck Sausage Casserole Recipe: How to Make It image

Number Of Ingredients 16

1 package (16 ounces) penne pasta
1 pound bulk Italian sausage
1 tablespoon butter
1 tablespoon olive oil
1 medium onion, finely chopped
1 medium carrot, finely chopped
1-1/2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon pepper
1 small zucchini, halved lengthwise and sliced
1 cup chopped fresh mushrooms
6 garlic cloves, minced
1 can (15 ounces) tomato sauce
1 jar (14 ounces) pasta sauce with meat
2 cups shredded part-skim mozzarella cheese
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions for al dente; drain and transfer to greased 13x9-in. baking dish. Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain and remove from pan., In same skillet, heat butter and oil over medium-high heat. Add onion, carrot, oregano, salt and pepper; cook and stir 5 minutes. Add zucchini, mushrooms and garlic; cook and stir 6-8 minutes longer or until vegetables are tender., Stir in tomato sauce, pasta sauce and sausage; pour over pasta. Sprinkle with cheese (dish will be full). Cover casserole with a piece of foil coated with cooking spray. Bake 10 minutes. Uncover; bake until golden brown and cheese is melted, 15-20 minutes longer. If desired, sprinkle with fresh parsley. Let stand 10 minutes before serving.

2 pounds ground beef
1 cup unseasoned breadcrumbs 
1/2 cup grated onion 
1/4 cup minced fresh parsley 
2 eggs 
Red pepper flakes, as needed
Salt and freshly ground black pepper 
2 tablespoons olive oil 
2 tablespoons butter 
1 can beef consomme
1 can beef broth 
2 tablespoons spicy brown mustard 
2 tablespoons tomato paste 
2 tablespoons cornstarch 

Steps:

  • For the meatballs: Place the ground beef, breadcrumbs, onion, parsley, eggs, red pepper flakes and some salt and pepper in a large bowl and mix together thoroughly. Form the mixture into uniform-size balls.
  • Heat the oil and butter in a large pan. When hot, begin frying the meatballs in batches, setting them aside on a plate or baking sheet when brown. You may need to drain any excess fat from the pan during the frying process. Continue frying until all the meatballs are browned. Set aside.
  • For the sauce: Add the beef consomme and three-quarters of the can of beef broth to the meatball pan, reserving the remaining broth in a small bowl. Add the mustard and tomato paste to the pan, then stir and bring to the boil.
  • Add the cornstarch to the reserved beef broth and whisk so there are no lumps. As the sauce starts to boil, add the cornstarch mixture. When the sauce has thickened after a few minutes, return the meatballs to the pot and stir to make sure they are all coated in sauce. Continue to simmer until the meatballs are cooked through, about 45 minutes.
