Here is recipe I came up with while cooking roast beef dinner. These Yorkies stay tall and have a perfect hollow centre for lots of yummy gravy.

Number Of Ingredients 4

4 eggs
2 cups all-purpose flour
2 cups milk
¼ cup vegetable oil

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • In a large bowl, whisk together the eggs and milk until well blended. Whisk in the flour one cup at a time until frothy and well blended. Set aside.
  • Distribute the oil equally among 12 muffin cups, a little over a teaspoon per cup. Place in the oven for 5 to 10 minutes, until smoking. Remove from the oven and quickly ladle about 1/4 cup of batter into each cup.
  • Bake for 30 to 35 minutes in the preheated oven. Serve immediately. I turn my oven off and leave the door partially open with the yorkies inside to keep them from deflating while waiting for everyone to ask for seconds.

The absolute classic recipe for crisp and fluffy Yorkshire puddings.

vegetable oil
2 large free-range eggs
100 g plain flour
100 ml milk

Steps:

    1. Preheat the oven to 225°C/425°F/gas 9.
    2. Get yourself a cupcake tin and add a tiny splash of vegetable oil into each of the 12 compartments.
    3. Pop into the oven for 10 to 15 minutes so the oil gets really hot.
    4. Meanwhile, beat the eggs, flour, milk and a pinch of salt and pepper together in a jug until light and smooth.
    5. Carefully remove the tray from the oven, then confidently pour the batter evenly into the compartments.
    6. Pop the tray back in the oven to cook for 12 to 15 minutes, or until risen and golden.

  • Preheat the oven to 220ºC/gas mark 7. Add 2 tsp oil to each of 4 x 18½cm sandwich cake tins and put them in the oven to heat up.

    Meanwhile, sift the flour into a large bowl and make a well in the centre. Beat in the eggs until smooth, then gradually add the milk, beating until the mixture is smooth and free of lumps.

    Pour the batter into a jug. Remove the hot cake tins from the oven and carefully pour a quarter of the batter into each tin. Bake for 20 minutes, or until the puddings are well risen and golden in colour.

    Fill the Yorkshires with your roast dinner and gravy, and serve immediately.
