GRANDMA'S EASY POTATO ROLLS RECIPE - FOOD.COM

Grandma's Easy Potato Rolls Recipe - Food.com image

These fluffy rolls (King Arthur Baking) are easy to mix up in a jiffy, since they take potato flour instead of mashed potatoes (potato flakes can be substituted). I mix them in my bread machine and the dough is silky and easy to shape. They turn out "picture perfect." They work out perfectly if you shape into 16 balls and put in 2 round pans (8 each).

Total Time 45 minutes

Prep Time 15 minutes

Cook Time 30 minutes

Yield 10 serving(s)

Number Of Ingredients 9

1 tablespoon instant yeast
1/2 cup milk
6 tablespoons butter
1/4 cup water
1 teaspoon salt
3 cups unbleached all-purpose flour (I use bleached)
1/4 cup potato flour (on baking aisle with specialty flours)
1/3 cup sugar
2 eggs

Steps:

  • Mix and knead together all ingredients in bread machine (or in mixer).
  • If mixing by hand, let dough rise about 90 minutes (or follow your bread machine's dough cycle).
  • Your dough might not have risen exactly double.
  • Transfer the dough to a lightly greased work surface and divide it into 16 pieces.
  • Round each piece into a smooth ball.
  • Place the balls in a 9x 13 pan, or 2 9 inch round pans, or separately on cookie sheet.
  • Cover the pan and let the rolls rise for about 1 hour or until doubled in bulk.
  • Preheat the oven to 325.
  • Bake the rolls for 30 minutes (tenting lightly with aluminum foil after 20 minutes to prevent overbrowning).
  • Rolls should be golden brown when done. Brush with additional melted butter.
  • Let cool slightly and turn out on a rack to cool.

POTATO BREAD AND BUNS WITH POTATO STARCH RECIPE - FOOD.COM

Potato Bread and Buns With Potato Starch Recipe - Food.com image

This yeast bread recipe uses potato starch that I keep on hand and makes a soft bun for burgers, dogs, and BBQ sandwiches.

Total Time 35 minutes

Prep Time 20 minutes

Cook Time 15 minutes

Yield 10 buns, 5-7 serving(s)

Number Of Ingredients 8

1/4 cup potato starch (33 g)
3 1/2 cups bread flour (1 lb)
2 teaspoons instant yeast (6 g)
2 1/2 teaspoons sugar (12 g)
1 1/2 teaspoons salt (9 g table salt)
1 1/3 cups water (300 g)
1 1/2 teaspoons butter (10 g)
1 egg (optional beaten with 1 tsp water)

Steps:

  • Mix all ingredients well and let sit covered for 10 minutes. Knead for 5 to 8 minutes and tip onto the counter dusted lightly with flour.
  • Stretch the dough into a rectangular shape and fold it letter-style top to bottom and side to side.
  • Place in an oiled straight-sided container and cover with plastic wrap. After 15 minutes, stretch and fold the dough again and return to the container.
  • When the dough is twice it's initial size, remove from bowl and on lightly floured surface, divide into 10 pieces weighing 85 g each (approximately).
  • Round each piece on the counter by pressing down as you circulate your hand in a counter-clockwise direction until the piece is a smooth ball.
  • Press each dough ball flat with floured hands, repeating as needed over the next 10 minutes and place on a pan or sheet lined with parchment paper.
  • Preheat oven to 375°F.
  • Cover with oiled plastic and let proof for about 30 minutes or so until the dough has risen about 1 1/2 times it's volume.
  • Brush with egg wash if desired and bake for 7 minutes.
  • Rotate pan and bake for 7 more minutes until 190F internally.
  • Cool buns on a rack until room temperature.

Liberally sprinkle on black and white sesame seeds, if desired. Bake the dough for 25-30 minutes until well colored. When baked, remove and let cool for 5 minutes on the sheets, then transfer to wire cooling racks.
