Yield Serves 8 (serving size: 3/4 cup shredded pork)

Number Of Ingredients 6

1 (4-lb.) boneless pork shoulder, cut into 4 pieces
8 garlic cloves, cut in half lengthwise
1 tablespoon kosher salt
1?½ teaspoons black pepper
2 teaspoons olive oil
½ cup water

Steps:

  • Make small slits in the pork using a paring knife, and stuff slits with garlic clove halves.  Sprinkle all sides evenly with salt and pepper. Press “Sauté” on Instant Pot, and allow it to heat 2 to 3 minutes. Add oil. Place 2 pieces of pork in oil, and cook, turning occasionally, until browned on all sides. Transfer to a plate, and repeat with remaining 2 pieces of pork.
  • Add browned pork back to Instant Pot, and pour in water. Press “Cancel”. Place cover on Instant Pot, and turn valve to “Sealing” position. Set to “High Pressure” for 65 minutes.
  • Carefully release the valve, and let steam escape. Transfer pork to a plate, and shred with a fork.

This Instant Pot Pork & Sauerkraut is a German classic made easy, and will easily become a part of your weekly dinner rotation.

2 pounds boneless pork roast ((shoulder or leg))
1 teaspoon salt
1/2 teaspoon ground pepper
1 tablespoon cooking oil
16 ounces sauerkraut (with liquid)
1 cup apple juice or chicken stock
1 teaspoon dried or fresh rosemary
1 small apple (peeled and sliced)
1/2 onion (cut in chunks)
1 carrot (sliced)

Steps:

  • Season the pork with salt and pepper on all sides.
  • Press the Saute button on the Instant Pot. When it’s hot, add the cooking oil. After 1 minute, add the pork roast and brown on all sides. Remove from the pot. Turn off the Instant Pot.
  • Pour the apple juice or chicken stock into the pot and whisk quickly to remove the browned bits from the bottom of the pot.
  • Return the pork to the pot with the liquid. Sprinkle with rosemary. Add the vegetables and apples around the sides of the pork. Top with the sauerkraut.
  • Put the lid on the Instant Pot. Make sure the valve is set to Sealing. Press the Pressure Cook button and set the cook time to 1 hour. When the cook time is over, allow the pot to naturally release pressure.
  • Take the pork out and slice it. Drain the sauerkraut. Serve together.
