FOR THE SCONES:
1/2 c. Cold Unsalted Butter
1 c. All-purpose Flour
1 c. White Whole Wheat Flour
2 tsp. Baking Powder
1/4 tsp. Baking Soda
1/2 tsp. Kosher Salt
1/3 c. Packed Brown Sugar
1/2 tsp. Cinnamon
2 Large Oranges, Zested
1/2 c. Buttermilk
1 tbsp. Freshly Squeezed Orange Juice
1 tsp. Pure Vanilla Extract
1 Large Egg, Lightly Beaten
2/3 c. Dried Cranberries
FOR THE GLAZE:
2 c. Powdered Sugar
2 tbsp. Freshly Squeezed Orange Juice
1 Large Orange, Zested
2 tsp. Pure Vanilla Extract
1/4 tsp. Fresh Nutmeg (More If You're A Big Fan Of Nutmeg!)

Steps:

  • For the cranberry orange scones:Preheat oven to 425°F. Line a baking sheet with parchment paper and set aside.Cut the butter into 1/4 to 1/2 inch sized pieces, place it in a covered bowl, and let chill in the freezer for 5–10 minutes while mixing the dry ingredients.In a medium bowl, stir together flours, baking powder, baking soda, salt, brown sugar, cinnamon, and orange zest, breaking up any clumps of zest. With a rigid pastry blender or two knives, cut in the chilled butter until mixture resembles coarse meal with some pea-sized pieces. Make a well in the center, and then add buttermilk, orange juice, vanilla, and egg. Stir just until combined, taking care to not over mix. Gently fold in cranberries, just until barely combined. Try to work rather quickly, so the butter in the dough stays as cold as possible. If the dough gets too warm, the scones will lose their shape more easily in the oven and have a more relaxed appearance with less defined edges.Transfer dough to a lightly floured work surface. Working quickly, knead the dough gently two or three times to bring it all together. Do not over work the dough. Just make sure the dough is sticking together nicely. Pat dough into a 7-inch diameter circle and cut into 8 wedges. Transfer wedges to prepared baking sheet. Bake until scones are puffed and golden brown, about 14 minutes. Remove pan from oven and let scones sit on baking sheet for a couple minutes before removing to a wire rack to cool.For the orange nutmeg glaze:While scones are still just slightly warm, prepare the glaze. In a small bowl, whisk together all glaze ingredients until smooth. If the glaze is a bit stiff, add another teaspoon of freshly squeezed orange juice. Drizzle the orange nutmeg glaze over the scones using a spoon, as much as you desire. Allow icing to set completely, then serve.Note: Scones are best eaten on the day they are baked. To revive leftover scones' flaky texture the following day, preheat a baking stone to 300°F in the oven. Then place any number of scones on the stone and warm for 5–10 minutes. If you are planning to eat some of the scones the following day, wait to add glaze until after you have reheated them the next day.

This is a very old, very easy biscuit recipe for those times you don’t have a second to waste.

2 1/3 c.

Whole Milk

3 tbsp.

White Distilled Vinegar

6 c.

Self-rising Flour, Plus More For Kneading

1 1/2 tsp.

Salt

3/4 c.

Lard (OR Butter OR Shortening OR A Combination)

Melted Salted Butter, For Brushing

Steps:

  • (Important note: You may substitute 2 1/2 cups buttermilk for the milk/vinegar mixture.)(Important note #2: If you use salted butter instead of shortening/lard, decrease the amount of salt you add.)Preheat the oven to 475 F.In a measuring pitcher, combine milk and vinegar. Stir together and set aside for 10 minutes. Note: You can use 2 1/2 cups buttermilk instead of the milk and vinegar if you have some on hand.In a large bowl sift together the flour and salt. Use a pastry cutter to cut in the lard (or butter or shortening or both) until the mixture resembles coarse crumbs. Pour the wet ingredients into the dry ingredients, stirring gently with a fork or wooden spoon until it all comes together. Flour the surface, then turn out the dough and knead 10-15 times, adding a little flour so it's less sticky. Roll out dough to 1/3 to 1/2 inch thick and use a biscuit cutter to cut medium to small circles. Place on a baking sheet 1/2 inch apart and bake for approximately 10 minutes, or until golden brown on top. Remove from oven and immediately brush on melted butter. To die for!***Baking time will vary depending on the size of the biscuit cutter you use. I made mini biscuits, which took about 9 to 10 minutes. Larger biscuits will take longer, so keep an eye on them as they bake.

  • Heat oven to 450ºF. Line two large sheet pans with parchment paper. In a large bowl, sift flour, sugar, and salt. If using any additions, add them at this time. Add fat and water to flour mixture. Mix until combined; the dough will be tacky. Flour a cool work surface. Divide dough in two. Roll the dough halves to rectangles 1/8 inch thick. Brush dough lightly with olive oil. Cut dough into desired cracker shapes using a sharp knife or biscuit cutter. Prick the crackers with a fork. Using a spatula or pastry scraper, transfer the crackers to the prepared sheet pans. Be careful not to crowd the crackers. Bake in the oven 12–15 minutes or until golden brown. If the crackers along the edges bake faster, transfer them to a cooling rack and allow the remaining crackers to bake. Transfer crackers to cooling rack. Crackers will crisp as they cool. Serve crackers immediately or store in an airtight container on the counter for up to a week.
