HAMBURGER POTATO CASSEROLE - JUST A PINCH RECIPES
This hamburger potato casserole is a flavorful and easy recipe. The final result is a cross between a baked goulash and beef stew. Between the onion soup mix and gravy mixes, there is plenty of seasoning. As this casserole cooks, the gravy thickens and the potatoes soak up all the flavor. The perfect weeknight meal.

Steps:
- Brown ground beef until no longer pink and drain.
- Wash & peel potatoes.
- Slice potatoes into 1/4 inch strips and place in the bottom of a large deep dish casserole pan that has been sprayed with cooking spray.
- Add one cup of water to cover potatoes.
- Sprinkle with onion soup mix.
- Slice onion and place over the potatoes.
- Mix brown gravy mix with 2 cups of water and whisk to mix.
- Place cooked hamburger meat over the onions and potatoes. Then pour gravy over meat.
- Cover with foil. Bake 1 hour at 350 degrees.

- Toss potatoes with butter and salt; arrange on the bottom and up the sides of a greased 13x9-in. baking dish. Bake, uncovered, at 400° for 25-30 minutes or until potatoes are almost tender. , Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Sprinkle beef and corn over potatoes. Combine the soup, milk, garlic powder, pepper, onion and 1/2 cup cheese; pour over beef mixture. , Bake, uncovered, at 400° for 20 minutes or until vegetables are tender. Sprinkle with remaining cheese. Bake 2-3 minutes longer or until cheese is melted. Sprinkle with parsley if desired.

- In a Dutch oven, layer half of the meat, potatoes and onion. Sprinkle with half of the salt and pepper. Repeat layers. Dissolve bouillon in water; pour over all. Top with tomatoes. , Cover and cook over medium heat for 45-50 minutes or until potatoes are tender. Garnish with parsley if desired.
