Pig Trotter Soup is a true classic, especially when prepared with 2 thickening agents.

pork trotters - 2
black pepper - 15 grains
carrots - 2
onions - 1 head
first thickening agent
yoghurt - 4/5 cup (200 g)
flour - 1 tablespoon with a peak
second thickening agent
garlic - 1 head
vinegar - 2 - 3 tbsp
cayenne pepper - 2 pinches

Steps:

  • Put the cleaned and washed pork trotters in a pot with water, heat to boiling point and discard this first water. Wash them again, pour in new water, add the onion head, sliced into 4 but not all the way through, and the carrots cut in 2, add the black pepper grains.
  • Boil until the meat comes off the bones. Strain the soup, remove the onions , carrot and black pepper grains (theyve done their job), cut the deboned meat finely and return to the soup.
  • Put on low heat to come to a boil. Separately, beat the yoghurt with the flour and a little cold water to a smooth sludge. In lots, pour spoonfuls of the soup to it, in order to even out the temperatures, next pour this thickening agent into the main soup.
  • Grate the garlic cloves on a fine grater, add the vinegar and cayenne pepper , stir and pour into the soup.
  • Leave to come to a boil again and remove the pot from the heat.
  • Serve.

pork trotters - 4
bay leaf - 2
black pepper - 10 peppercorns + ground, to taste
milk - 2 cups (500 ml)
butter - 1/3 cup (80 g)
flour - 2 tbsp
paprika - 1 tbsp
salt
cayenne pepper - to taste

Steps:

  • Put the cleaned pork trotters in a pressure cooker with water along with the bay leaves and black pepper . Boil for 50 minutes after the water comes to a boil. Then strain the broth into another pot, separate the meat from the trotters and cut it.
  • Put the broth on the stove, add the meat and warm milk. Separately, heat the butter and fry the flour and paprika in it. Dilute the roux is with some of the soup and pour it into the rest of the soup.
  • Finally, season with salt and paprika. Serve the soup of pig trotters with blended garlic , vinegar , chili and horseradish as desired.
