1 red Bell pepper
250 grams Green cabbage
1 onion
2 garlic
2 tablespoons butter
1 teaspoon ground paprika (sweet)
1 teaspoon ground paprika (hot)
1 teaspoon Caraway
800 milliliters Vegetable broth
2 teaspoons Tomato paste
salt
freshly ground peppers
400 grams Salmon
1 tablespoon lemon juice
100 grams Whipped cream
3 tablespoons scallions

Steps:

  • Rinse the bell peppers and cut in half. Remove the stem, seeds and ribs. Rinse the cabbage and cut out the stalk. Cut the cabbage and peppers into thin strips. Peel and finely chop the onion and garlic. Sweat in some butter until soft. Add the cabbage and peppers and season with paprika and caraway. Continue to stir.
  • Pour in the broth and stir in the tomato paste. Season with salt and pepper. Place the lid on the pan and simmer the soup for 2 minutes until the vegetables are al dente. Cut the fish fillet into about 1 cm cubes (approximately 1/2 inch) and drizzle with lemon juice. Mix the sour cream with about 100 ml of hot soup (approximately 1/2 cup) and then stir back into the remaining soup. Add the fish to the hot soup and cook for no longer than two minutes.  Serve garnished with chives and with brown bread if desired.

When I saw the original recipe in a gourmet food magazine, I thought "yuk - fish and cabbage!". But, as I reread the ingredients I knew this would be a keeper. I was right, this stew is on my 5 star list! I like a soupier version so I use a 3rd bottle of clam juice, a whole cup of cream snd 1/2 cup of white wine - it's delicious!

Number Of Ingredients 10

4 slices bacon, diced
1 large onion, chopped
2 (8 ounce) bottles clam juice
1 large baking potato, peeled and cut into 3/4 cubes
3 cups sliced green cabbage
10 ounces boneless skinless cod, cut into 1 inch pieces (you can substitute another firm fleshed, mild tasting white fish such as pollock)
1/2 cup heavy cream
2 tablespoons chopped chives
salt
white pepper

Steps:

  • Fry bacon in a 4 1/2 qt (or larger) sauce pan until crisp.
  • Remove bacon with a slotted spoon and drain on paper towels.
  • Add onion to drippings and sautee until golden.
  • Add clam juice and potato, bring to a boil, reduce heat and simmer until potato is tender.
  • Add cabbage, and simmer 2 minutes.
  • Add fish and simmer until fish turns opaque.
  • Add cream, bacon, chives, salt and white pepper and simmer 1 minute before serving.

I ate a cabbage soup at a restaurant that was so delicious, I had to seek out the recipe. I was so happy when I found a version of this recipe in one of my older cookbooks. I changed some ingredients to match the taste of what I ate at the restuarant and here is the result. The cook times will vary greatly from microwave to microwave, so you may need to keep checking for doneness the first time. If you like a little more zest, toss in a little garlic or a slice of ginger, or even float some fresh jalapeno slices on top if you like it really spicy. I have posted the family friendly version, but feel free to adjust the seasonings to your liking. Please note: despite the addition of milk in this, the soup is not a creamy soup, but is more brothy.
