Use a pumpkin-shaped cookie cutter to make these cute pies stuffed with a sweet confection.

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 egg, beaten
6 creme-filled chocolate sandwich cookies

Steps:

  • Heat oven to 350°F. Line cookie sheet with cooking parchment paper or foil.
  • Unroll pie crust on lightly floured work surface. Use 3-inch pumpkin-shaped cookie cutter to cut 12 pumpkins. (Scraps can be rolled in ball, rolled out with a rolling pin and cut to make additional pumpkins.) Lightly brush each pumpkin with beaten egg.
  • Place 1 chocolate sandwich cookie on center of 6 of the pumpkins. Place another pumpkin on top of each; gently press edges together to seal. Place on cookie sheet; lightly brush tops with beaten egg.
  • Bake 10 to 15 minutes or until golden brown.

3 1/2 cups of all purpose flour
1 1/4 cup sugar
2 sticks of butter (room temperature)
1 egg
1 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla extract.

Steps:

  • In the bowl of a mixer (or with a handheld mixer), cream together the butter and sugar until fluffy. Add in the egg and vanilla, then mix again until thoroughly combined.
  • In a separate bowl, mix together the flour, baking powder and salt.
  • Slowly add the dry ingredients to the wet ingredient and mix together until you have a thick mixture, but it will be spreadable (similar to peanut butter).
  • Baking depends a lot on a lot of different factors – add the last cup of flour slowly until you get the right consistency. If you add it all, yours might be too dry.
  • Wrap the mixture with clear plastic wrap, and put in the refrigerator for an hour or so until completely chilled. Half the mixture, then roll it out between two sheets of parchment paper until it is the desired thickness (no additional flour needed = no mess - yay!). Cut with cutters, then bake at 350 degrees for 8 to 10 minutes or until bottom JUST begins to brown. Keep an eye on them, they'll bake rather quickly.

Roll the first flattened piece of dough into a cone-shaped or S-shaped center piece. Wrap each of the remaining flattened pieces around the cone, one at a time, shaping petals. Refrigerate the dough rose until it's time to bake, glazing it with an egg-white mixture just before putting it into the oven.
