Kids and adults love these crunchy, garlicky pickles. One of my signature dishes, these are always on my coffee table for dinner guests to snack on because my son eats broccoli several times a week, and this is the perfect destination for the stems. If you buy your broccoli with the stems attached (as opposed to the crowns only), you’ll now feel like you’re getting a lot for your money.

Yield Makes about 1/2 cup

Number Of Ingredients 5

3 or 4 broccoli stems (from one bunch)
1/2 teaspoon salt, preferably kosher salt
1 medium size garlic clove, minced or pureed
1 tablespoon sherry vinegar
2 tablespoons extra virgin olive oil

Steps:

  • Peel the broccoli stems and cut, either crosswise into 1/4 inch thick medallions, or lengthwise in 1/4 inch thick slices (as pictured above) Place in a jar, add the salt, cover tightly and shake the jar to toss the stems with the salt. Refrigerate for several hours or overnight.
  • Drain the water that has accumulated in the jar. Add the garlic, vinegar, and olive oil and toss together. Refrigerate for several hours or overnight. Serve with toothpicks.

An easy and delicious way to use up a garden bounty, this spicy pepper pickled broccoli is the perfect side to a main meal or snack, any time of the day!

Number Of Ingredients 9

3 lbs broccoli (cut into small florets)
2 Tbsp pickling salt (sea salt)
4.5 C vinegar
4.5 C water
25 whole peppercorns
5 tsp mustard seed
5 tsp dill seed
5 garlic cloves
10 chile de arbol (stem removed)

Steps:

  • Wash your broccoli florets and set aside.
  • In a large stainless steel pot, combine your salt, vinegar, and water and bring to a boil. Stir salt until combined, then push off the stove.
  • Prepare your 5 pint jars: tightly pack with broccoli, then equally divide up the remaining ingredients: peppercorns, mustard and dill seed, garlic, and chile de arbol (stem removed).
  • Pour the hot brine over the jar contents, leave 1/2 inch of headspace. Wipe the rims, and apply your lids and rings until tight.
  • Process in a hot water bath for 15 minutes; remove from the heat, allow the jars to cool for 12-24 hours on a towel on your countertop.
  • Allow to sit in a cool, dark pantry for 3 weeks before consuming.
