Eggs 2 Egg white 1 Oil 1 tbsp Minced chicken 250 grams Ginger 1 medium sized piece Black mushroom 3-4 Lemon juice 1 tbsp Salt as required White pepper ½ tsp Black pepper ½ tsp Flour 2 tbsp Water 2 tbsp Tomato 1 Green onion 1 Aluminum foil as required Steamer 1

Steps:

  • In a bowl beat 2 eggs, 2 tbsp water and 2 tbsp flour. Pour in the egg mixture into a non-stick pan and fry the omelet .When the omelet sheet becomes firm keep it aside. In a food processor chop together chicken minced, soft black mushrooms, green onions, ginger, and egg white, tomatoes without seeds, black pepper, and white pepper, salt and lemon juice. Transfer the minced meat mixture in a bowl. Now spread the minced meat mixture evenly on the omelet and roll. Pack it with aluminum foil and steam in a steamer for 12-15 minutes. Serve hot.

2 boneless skinless chicken breast halves
10 pieces ham, about 2 x 1/2 inch strips
12 -15 small shrimp, cleaned and deveined
2 teaspoons minced green onions
2 teaspoons minced lemongrass (optional)
1/2 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
cornstarch
cooking oil
nuoc cham sauce (recipe ID #25375 Nuoc Cham - Vietnamese Spicy Fish Sauce)

Steps:

  • Slice chicken into 5 thin strips, about 5 per breast.
  • Flatten with a Chinese cleaver or mallet.
  • Mash shrimp; add onions, lemongrass, salt and pepper and blend into a thick paste.
  • Lay ham strips on the chicken pieces; add a tsp of shrimp to each, and roll.
  • Secure with toothpicks.
  • Dip in cornstarch, then fry in oil in a skillet until golden brown.
  • Serve with my recipe for"Nuoc Cham- Vietnamese Spicy Fish Sauce" (recipe#25375).
