MICHAEL'S FAMOUS PHILLY CHEESE STEAK SANDWICH RECIPE ...
The secrets of a great cheese steak are the quality of the ingredients and the thinness of the raw beef. The beef is best cut into paper-thin slices on an electric slicer. If an electric slicer is out of the question (many home kitchen stores sell these small machines inexpensively), try our method below to achieve similar results.

Yield Makes 4 to 6 servings

Steps:
- 1. Tightly roll the eye round steak into a torpedo or log shape. Wrap tightly in plastic. Place log in freezer for 45 minutes to firm the beef into a tight but not frozen texture.
- 2. Remove plastic, and working quickly, use an electric knife to slice the beef into paper-thin strips, almost shaving the beef. If this does not work well, use a sharp knife and cut the beef into the thinnest slices possible, then flatten the slices using a meat tenderizer. Refrigerate slices until ready to cook.
- 3. Peel and halve onion. Slice into paper-thin half moon pieces. Halve the peppers, remove and discard seeds, and then slice into thick wedges.
- 4. Warm 2 tablespoons of the oil in a large skillet over low heat. Add onions and cook 8 to 10 minutes, until caramelized and softened, stirring frequently. Do not allow them to brown. Transfer onions to bowl; add pepper to same skillet, still over low heat. Cook peppers 10 to 15 minutes, until soft and tender, flipping often. Transfer to bowl with onions. Season onion-pepper mixture to taste. Cover bowl to keep warm.
- 5. In a clean skillet, warm the remaining 2 tablespoons oil over medium heat. Cook the beef in 2 batches, until lightly browned and cooked through, stirring often. Add olive oil if necessary.
- 6. To serve: Pile beef strips, peppers and onions and cheese slices inside a hero roll.

Steps:
- Preheat oil to 350 degrees F in medium saucepan. Fill with enough oil that egg rolls will not rest on the bottom of pan. Mix egg and milk together, in a small bowl, for egg wash.
- In medium saute pan over medium heat add olive oil, onion, and peppers. Sweat vegetables until slightly softened, about 2 minutes. Add roast beef and saute until onions are translucent, about 5 minutes more. Add cheese and mix thoroughly, until cheese begins to melt. Remove from heat, strain in a fine mesh sieve to remove excess moisture, and let cool.
- Divide cooled mixture into 8 equal parts. Place mixture in center of each egg roll skin. Fold in side corners and roll, sealing edges with egg wash. Submerge egg rolls in oil and fry, making sure the rolls do not touch the sides or the bottom of the pan. Fry in batches, to avoid over-crowding. until golden brown. Remove egg rolls to paper towels to blot excess oil. Cut egg rolls on bias, place on a serving platter and serve hot

- Preheat oven to 350°. On a large baking sheet, toss hoagie rolls with melted butter and garlic powder. Bake until lightly golden, about 15 minutes. In a large skillet over medium heat, heat 1 tablespoon oil. Add onion and peppers and season with salt and pepper. Cook, stirring occasionally until soft, about 8 minutes. Stir in garlic and cook until fragrant, 1 minute more, then transfer mixture to a large bowl. Increase heat to medium-high and heat remaining tablespoon oil. Add steak in a single layer, working in batches if necessary. Season generously with salt and pepper and let sear until bottom is deeply golden, 3 minutes. Flip, then sear the other side. Return vegetables to skillet with steak and stir in Worcestershire. Remove from heat. Grease a 9"-x-13" baking dish with cooking spray. Spread half the hoagie rolls on the bottom of the dish, then add in half the meat and vegetable mixture. Top with 6 slices provolone and repeat with remaining half of the hoagie rolls and meat and vegetable mixture. Pour broth over, then top with remaining 6 slices of cheese. Bake until cheese is melty, 15 minutes. Garnish with parsley before serving.
