Grape Tomato, Olive, and Spinach Pasta Recipe | MyRecipes image

We love small, sweet grape tomatoes in this quick meatless pasta dish, but you can sub cherry tomatoes or larger tomatoes that have been seeded and diced.

Yield Serves 4 (serving size: 1 1/4 cups)

Number Of Ingredients 12

8 ounces uncooked penne (about 2 cups)
2 teaspoons olive oil
¼ teaspoon crushed red pepper
1 large garlic clove, thinly sliced
2 cups grape tomatoes, halved
½ cup organic vegetable broth (such as Swanson)
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
10 kalamata olives, pitted and coarsely chopped
4 cups baby spinach
¼ cup torn basil leaves
1 ounce Parmesan cheese, grated (about 1/4 cup)

Steps:

  • Bring a large saucepan of water to a boil. Add pasta; cook 8 minutes or until al dente, omitting salt and fat. Drain in a colander over a bowl, reserving 1/2 cup cooking liquid.
  • Heat a large skillet over medium heat. Add oil to pan; swirl to coat. Add red pepper and garlic; sauté 30 seconds. Add tomatoes, broth, salt, black pepper, and olives; cook 6 minutes or until tomatoes begin to break down, stirring occasionally. Add pasta and 1/2 cup reserved cooking liquid to pan; simmer 2 minutes. Stir in spinach and basil; cook 2 minutes or until greens wilt. Divide pasta mixture evenly among 4 bowls; top with Parmesan cheese. Serve immediately.

This 20-minute pasta recipe with chicken and grape tomatoes is bursting with flavor and is easy to make. A great way to use those summer tomatoes!

Number Of Ingredients 9

2 skinless chicken breast halves (1 lb) (diced in 1 inch cubes)
cooking spray
1/2 tsp each of dried oregano and dried basil
kosher salt and fresh pepper (to taste)
8 oz spaghetti (gluten-free or whole wheat )
2 cups grape tomatoes (halved)
6 cloves garlic (smashed and coarsely chopped)
4 tsp extra virgin olive oil
4 tbsp chopped fresh basil

Steps:

  • Bring a large pot of salted water to boil.
  • Season chicken generously with salt, pepper, oregano and basil.
  • Heat a large skillet on high heat. When hot, spray with oil and add chicken. Cook about 3-4 minutes, until no longer pink.
  • Remove chicken and set aside.
  • Add pasta and cook according to package directions. Reserve about 1/2 cup pasta water before draining.
  • While pasta cooks, add olive oil to skillet on high heat.
  • Add garlic and sauté until golden brown (do not burn). Add tomatoes, salt and pepper and reduce heat to medium-low. Sauté about 4-5 minutes.
  • When pasta is drained, add pasta to tomatoes and toss well. If pasta seems too dry, add some of the reserved pasta water.
  • Add fresh basil and chicken and toss well. Serve and top with good grated cheese.
