Pancake Mix Corn Dogs - Hy-Vee Recipes and Ideas image

Make your own corndogs with pancake mix for a fair food fix! Fry for 4 to 5 minutes or until golden brown and serve with Hy-Vee original mustard.

Yield 8 1 corn dog each

Number Of Ingredients 7

3 qt. of Hy-Vee canola oil
1 c. of Hy-Vee complete pancake and waffle mix
0.5 c. of yellow cornmeal
0.25 tsp. of Hy-Vee salt
0.75 c. of Hy-Vee club soda
8 all-beef fully-cooked hot dogs
0 Hy-Vee yellow mustard

Steps:

  • 1.

    Place a wire rack in a large rimmed baking pan; set aside. Heat 3-quarts canola oil to 325 degrees in a heavy-bottom 6-quart stockpot. 

  • 2.

    Meanwhile, whisk together pancake mix, yellow cornmeal, and salt in a bowl. Stir in club soda. Skewer 8 hot dogs with bamboo skewers and dip into batter, covering hot dog completely, and allowing excess to drip off. 

  • 3.

    Fry, a few at a time, in hot oil for 4 to 5 minutes or until golden brown and hot dogs are heated through (165 degrees). Transfer to rack in pan; drain. Serve with yellow mustard, if desired.

Steps:

    1. Pour vegetable oil into a large skillet and bring to medium heat.
    2. Insert a skewer into each hot dog.
    3. Starting at the bottom, make an incision in each hot dog and twist upwards to create a spiraled cut along the entire length of the hot dog.
    4. Create a gap between each layer by gentling pulling the hot dog down the skewer.
    5. Mix water and pancake mix until you achieve a dough-like consistency. Add additional pancake mixture if need to make dough workable.
    6. Section dough into eight even balls and roll into long strips.
    7. Wrap a dough strip around each hotdog, tucking the dough into the open slits.
    8. Place hot dogs in heated oil. Rotate every 30 seconds until evenly browned (approximately 2-3 minutes).
    9. Remove and serve immediately.

Do the same with the cheese sticks.Dip the hot dogs into the batter and allow excess to drip off for a couple of seconds. Carefully drop into the oil (stick and all) and use tongs or a spoon to make sure it doesn't hit the bottom of the pan and stick. Flip it here and there to ensure even browning, and remove it from the oil when the outside is deep golden brown, about 2 to 3 minutes. Repeat with cheese, allowing it to get as golden as possible so that cheese will melt completely.Serve with spicy mustard.
