SPICY PAN-FRIED PORK BUTT | CHINA SICHUAN FOOD

Steps:
- Cut the pork butt into 2 cm thin large pieces and marinate the pork with all of the seasonings. Set aside overnight.
- Drain to remove the extra sauce on the surface. Mix all of the sprinkling spice together in a small bowl.
- Heat oil in a cast iron or a regular pan until really hot, and then fry the pork butt over high fire for 1 minute on both sides until well caramelized. And then slow down the fire and fry the pork slices for another 3-4 minutes until you can insert a chop stick in easily. Turn over twice during the process. Sprinkle half of the spices evenly on both sides..
- Cut the pork butt into small cubes and mix with spices. I recommend add some mint leaves, which can add a small faint flavor and work as a decoration.

My mom used to make this and it is my favorite meal. The pork butts come out so tender and juicy. 'Butts' are a favorite in my family. Serve with baked or mashed potatoes and a veggie. If you like a lot of sauce then double the recipe, the sauce is fantastic.

Steps:
- Heat a large skillet over medium heat. Season the pork steaks on both sides with salt, pepper and garlic powder. Place in the skillet and cook until browned on each side, about 4 minutes per side.
- Place sliced onions on top of the steaks in the pan. Stir together the ketchup and water in a medium bowl; pour over the steaks. Bring to a simmer, then reduce the heat to medium-low, cover and cook for about 2 hours. The longer you cook, the better the meat tastes.
