4 each Chicken - boneless skinless breast halves
2 tablespoon Butter
1 container Wal-Mart Sugar Free Drink Mix - Early Rise Orange
2 cup Water
1 tablespoon Corn starch

Steps:

  • "Clean chicken and trim any excess fat. Cut into bite size pieces. Dissolve drink mix in water. Place chicken, butter, and drink mix in covered skillet or electric dutch oven. Cook on low heat for 15 to 20 minutes or until chicken is done. Remove chicken and set aside. Bring liquid to a boil. Meanwhile dissolve corn starch in small amount of water. Stir into orange sauce and continue cooking until thickened. Add chicken and stir until coated. Serve with either steamed or fried rice. My wife believes the recipe as above is a little tart so I use one half of the orange drink mix when fixing it for her."

I found this in the Fall TOH Cooking for 2. It looks perfect for my DH. Since it makes 4 mini loaves, I can also freeze extras to eat later.

Number Of Ingredients 10

1 1/2 cups all-purpose flour
1/2 cup sugar (sugar substitute) or 1/2 cup Splenda granular (sugar substitute)
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 egg
1/2 cup orange juice
1/4 cup butter, melted
2/3 cup chopped cranberries
1/4 cup chopped walnuts

Steps:

  • In a large bowl, combine the flour, sugar or Splenda, baking powder, salt and baking soda.
  • In a small bowl, beat the egg, orange juice and butter. Stir into dry ingredients just until moistened.
  • Fold in cranberries and walnuts.
  • Transfer to four 4-1/2-in.x2-1/2-in.x1-1/2in. loaf pans coated with nonstick cooking spray.
  • Bake at 350 degrees for 25-28 minutes or until a toothpick comes out clean.
  • Cool for 10 minutes before removing from pans to wire racks.
  • Bread may be frozen for up to 3 months.
