Slow-Cooked Lasagna Soup | Hy-Vee image

1.25 lbs. of fresh Graziano Bros. Italian sausage
0.666 c. of yellow onion
4 garlic cloves
5 c. of Hy-Vee 33%-less-sodium chicken broth
1 (28-oz.) can Full Circle Market organic crushed tomatoes with basil
1 (14.5-oz.) can Full Circle Market organic fire roasted diced tomatoes
1 tbsp. of Hy-Vee tomato paste
1 tsp. of Hy-Vee Italian seasoning
0.25 tsp. of coarse-ground black pepper
0.5 (12-oz.) pkg. Hy-Vee mini lasagna pasta
0.666 c. of Hy-Vee whole milk ricotta cheese
0.666 Hy-Vee finely shredded mozzarella
0.25 c. of Soirée grated Parmesan cheese
3 tbsp. of Hy-Vee milk
1.5 tbsp. of fresh basil
0 Hy-Vee crushed red pepper
0 8 Easy Drop Biscuits

Steps:

  • 1.

    Cook sausage, onion and garlic in a large nonstick skillet over medium-high heat for 5 to 8 minutes or until sausage is cooked through (165 degrees) and onion is softened, stirring occasionally to break it into large crumbles.

  • 2.

    Transfer sausage mixture to a 6-qt. slow cooker. Stir in broth, undrained crushed tomatoes, undrained fire roasted diced tomatoes, tomato paste, Italian seasoning, and black pepper.

  • 3.

    Cover and cook on HIGH for 2-1/2 hours or LOW for 5 hours. Uncover and stir in uncooked pasta. Cover and cook on HIGH for 25 to 30 minutes or just until pasta is tender.

  • 4.

    Stir together ricotta, mozzarella, and 1/4 cup Parmesan cheese, milk, and 1-1/2 tablespoon basil.

  • 5.

    To serve, ladle soup into serving bowls; top with ricotta mixture. Garnish with additional basil and crushed red pepper, if desired. Serve with additional Parmesan and biscuits, if desired.

1 small onion, grated
1/3 cup chopped fresh Italian parsley
1 large egg
1 teaspoon minced garlic
1 teaspoon salt
1 slice fresh white bread, crust trimmed, bread torn into small pieces
1/2 cup grated Parmesan
8 ounces ground beef
8 ounces ground pork
Freshly ground black pepper
12 cups low-sodium chicken broth
1 pound curly endive, coarsely chopped (1 pound of escarole would be a good substitution)
2 large eggs
2 tablespoon freshly grated Parmesan, plus extra for garnish
Salt and freshly ground black pepper

Steps:

  • To make the meatballs: Stir the first 6 ingredients in a large bowl to blend. Stir in the cheese, beef and pork. Using 1 1/2 teaspoons for each, shape the meat mixture into 1-inch-diameter meatballs. Place on a baking sheet.
  • To make the soup: Bring the broth to a boil in a large pot over medium-high heat. Add the meatballs and curly endive and simmer until the meatballs are cooked through and the curly endive is tender, about 8 minutes. Whisk the eggs and cheese in a medium bowl to blend. Stir the soup in a circular motion. Gradually drizzle the egg mixture into the moving broth, stirring gently with a fork to form thin stands of egg, about 1 minute. Season the soup to taste with salt and pepper.
  • Ladle the soup into bowls and serve. Finish soup with parmesan cheese if desired.
