Steps:
- 1. Make a wet tomato sauce by braising sliced onion in oil, adding liquidized tomatoes and spices. 2. Spoon 3/4 of the sauce onto the bottom of an oven proof casserole dish. 3. Heat butter, saute garlic, add chillies, lemon and spices with chicken. 4. Once water is cooked out, add cottage cheese. 5. Spoon onto pasta sauce. 6. Braise onion in butter till softened. Add spinach, salt, pepper and milk. Cook till milk has reduced. 7. Then add fresh cream to spinach with flour and mix in. 8. Boil on low till cream has reduced and spinach is creamy. 9. Boil pasta for 5min, till al-dente. Drain. 10. Arrange shells next to each other in casserole dish ontop of pasta sauce and creamy chicken. 11. Generously stuff creamed spinach into shells. 12. Then drizzle on reserved pasta sauce and sprinkle on mozzarella. 13. Sprinkle dry sweet basil. 14. Cover with foil and bake in preheated oven at 180 deg C till heated through. 15. Remove foil. Arrange fresh basil leaves over cheese and serve hot.

Prepare the chicken by chopping into bite-sized chunks. Set aside.
Heat half the olive oil in a large frying pan over a medium heat. Add the onion and garlic and fry for 1 minute. Add the chicken and courgette and fry for about 8 minutes, until the chicken is cooked through with no pink remaining.
Meanwhile, bring a large pan of water to the boil, add the pasta and cook for 8 minutes.
Drain the pasta and stir into the chicken mixture with the remaining olive oil, the chopped parsley, lemon zest and juice. Combine well and serve.

- Heat the oven to 325 F Place the chicken in a roasting pan, rub it thoroughly with olive oil, salt, pepper and cumin, stuff it with a cup up lemon. Pour a cup of water around the chicken, add the other cut up lemon, herbs and juniper berries to the water. Cover the bird with aluminum foil fairly tightly and place in the oven for 2 1/2 hours. Meanwhile make the soup. In a large pan heat the olive oil, add the chopped onion and saute for a good 8 minutes or so, just don't let them burn. Add the garlic, saute for a further 2 minutes, then add the leeks, potatoes, carrots, salt and pepper, cumin and Worcestershire sauce. Stir well and add the broth. Bring to a boil, turn down to a simmer and partially cover until all the veggies are well cooked through, about 20-30 minutes. Cook the pasta shells, toss in a tiny bit of olive oil, salt and pepper so they don't stick together and reserve. Add the frozen peas to the soup, they will cook through themselves, along with the chicken. Add the a grinding of black pepper, a sprinkling of fresh parsley and the pasta just before serving. Offer Parmesan if you wish.
