- Mix all ingredients except ground round.
- Shape ground round into patties, 3/4" thick.
- Place in a covered container and pour the marinade mixture over them.
- Cover tightly and refrigerate 12 hours or overnight, turning patties frequently.
- Remove from marinade and sear over high heat to seal in the juices.

Steps:
- Put 6 patties on a flat, nonreactive baking dish. Place a bay leaf under each burger and sprinkle the garlic over them.
- Stir the wine, lemon juice, vinegar and oil together and pour over the patties. Sprinkle with salt and pepper to taste. Cover and refrigerate, turning the burgers several times, for at least 3 hours. Half an hour before cooking, remove the bay leaves and drain the patties on paper. Grill, broil or fry in a hot cast-iron skillet, 3 to 6 minutes per side. Serve on warmed rolls.

- In a large bowl, combine the beef and water chestnuts. Shape into six patties. Place in a 13x9-in. dish. , In a small bowl, combine the soy sauce, sherry or broth, onions, brown sugar, garlic and ginger. Pour 1/2 cup over patties; cover and refrigerate for 2-3 hours or overnight. Cover and refrigerate remaining marinade for basting. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.
