SKILLET CAULIFLOWER-FETA PIZZA | LODGE CAST IRON



Skillet Cauliflower-feta Pizza | Lodge Cast Iron image

If you haven’t made pizza with cauliflower, prepare to fall in love.

Number Of Ingredients 15

1 ½ cups of white whole-wheat flour, plus more as needed
1 teaspoon of quick-rise yeast
¼ teaspoon of salt
1 teaspoon of honey
¾ cup of warm water (110-115 degrees Fahrenheit)
2 tablespoons of extra-virgin olive oil
8 of ounces cauliflower florets (3½ cups)
½ cup of chopped onion
½ of small redbell pepper, seeded and chopped
2 of cloves garlic, sliced
of Canola oil
1 tablespoon of sesame seeds
3 of ounces feta cheese, crumbled
2 of ounces asiago cheese, shredded
½ cup of chopped fresh parsley or basil

Steps:

  • Preheat the oven to 425 degrees Fahrenheit. 
  • In a large bowl or stand mixer fitted with the dough hook, make the pizza dough. Combine the flour, yeast, and salt. Stir in the warm water and 1 tablespoon of the olive oil. Knead or mix in the bowl, kneading in extra flour if needed to make a soft, barely sticky dough. Put the dough in an oiled bowl and let rise in a warm spot while you prep the veggies, until it is doubled in volume.
  • In a large roasting pan, toss together the cauliflower, onion, bell pepper, garlic, and remaining 1 tablespoon olive oil. Roast, uncovered, for 20 minutes. The cauliflower should be soft and golden brown in spots. Let the veggies cool slightly. 
  • Lightly oil a cast iron Baking Pan with canola oil and sprinkle the bottom with the sesame seeds. Punch down the dough, then shape it into a large round. Press the dough into the cast iron pan and press it up the sides about an inch. Sprinkle the roasted veggies, cheeses, and parsley evenly over the top. Bake until the crust is crisp in the center of the pizza and the cheeses are melted and golden, about 20 minutes. 
  • Tilt the pan and use a metal spatula to lift the pizza onto a cutting board. Cut it into 6 wedges and serve.

Garnish this classic pizza dough with your favorite toppings and bake it on a Cast Iron Baking Pan for that perfect crust!

Prep Time 45 minutes

Cook Time 8 minutes

Yield 10 - 12

Number Of Ingredients 6

3 cups of bread flour, divided
1 of packet (¼ ounces) active dry rapid-rise yeast
1 teaspoon of salt
1½ teaspoons of honey
1¼ cups of lukewarm water
1 tablespoon of olive oil

Steps:

  • In a large mixing bowl, mix ½ cup flour with yeast and salt. Dissolve honey in lukewarm water and add to mixture. Add olive oil. 
  • In the bowl of a mixer, or using a wooden spoon, mix for 3 minutes. Mix in remaining flour (dough should be only slightly sticky). 
  • Knead dough on a floured surface until smooth, approximately 5 minutes. 
  • Place dough in a lightly oiled bowl and cover with plastic wrap. Let rise for 10 minutes in a warm place. 
  • Punch dough down and divide in half. Allow to rise for 10 additional minutes. Punch down and spread one of the halves by hand or roller onto your Cast Iron Baking Pan.
  • Add toppings of your choice and place in a preheated 450 degrees Fahrenheit oven for 8-10 minutes, or until crust is golden brown. Cool 2-3 minutes before cutting or serving.
